Black Bean, Corn and Turkey Chili
I was looking for a recipe to use up some holiday leftovers, and this one did the trick, with the following modifications: Omit ground turkey. Add 1 cup each cooked, diced turkey and cooked diced ham in step 2 before bringing to a boil. Used about a cup of leftover corn instead of canned. I served in a bowl over some leftover mashed potatoes and topped with a bit of shredded cheddar.

Spinach Quiche
I've been making this quiche for a few years and my family loves it. The only changes are to use half the butter, no salt in the spinach mixture, and add all the cheddar to the spinach mixture rather than how recipe describes. I used jarred mushrooms for convenience but prefer to use fresh and saute with onions.

Kielbasa and Cabbage
I gave this recipe 5 stars because it was delicious from the first time I made it. I've made a few slight changes because of either family preference or convenience. I used two kielbasas instead of one; a few extra slices of bacon (both my husband's request); a bag of cole slaw cabbage with carrots instead of chopping a head of cabbage (to save prep time). I make seasoned roasted potatoes to go with it, which take just 10 minutes in the microwave. I recommended the original recipe to a friend who doesn't like cabbage, and she loved it. I think the bacon fat, sugar, and blend of caraway seeds and spices helps take the edge off of any strong cabbage taste.
