Pumpkin Pancakes

VERY dense. Not just thick, but heavy. I'm going to use less flour next time and more milk. I used Cider vinegar this time, and will again, I think. Next time I'll increase the spices by about double, and use melted butter instead of vegetable oil for a more buttery flavor.

Cioppino

A very good basic recipe. You can basically use whatever fish/shellfish you want, though it's better to use a firm white fish like halibut or cod. I added a little tomato paste for some depth of flavor, and San Marzano tomatoes. I also added a small shot of Balsamic Vinegar (something my great grandpa always added at the end of his). I grew up with Cioppino, and this recipe is a great launching point for it.

Cornbread Muffins I

I had two extra cobs of corn, and in a family of 5, that's not enough to go around, so I looked in my recipe book for something that used just shy of a cup of corn, this was it. The muffins came out a tad dark because I don't use papers on muffins (personal preference) so next time I'll take down the cooking time. Inside, they were moist and perfect. Even the ones that were left out on the counter overnight were very dense and moist in the morning. I was very pleased. They were sweeter than most corn bread I make, but since they were made as a side to my husband's chilli, the sweetness was a nice counterpoint to the salt and spice.

Peking Pork Chops

This was definitely a good starting off point for a recipe, though I am going to tinker with it. I'm thinking that replacing the brown sugar with honey might be nice, and I'm certainly going to do what others have done and cut the soy sauce in half. I also thought that plum sauce might be nice in place of the ketchup, along with some chopped green onions thrown in for the last hour or so.

Slow Cooker Chicken and Dumplings

I'm sorry, not my favorite on this site. Usually I follow the recipe to the letter the first time I make something. Big mistake. This needs a lot of tinkering. The chicken obviously needs to be well seasoned, I may try using bone in breasts to give the broth some body, some veggies and herbs are definitely needed. Celery and carrots at the very least. I will have to try again with some major revamping.

Ham and Potato Casserole with Gruyere

I bookmarked this recipe a while back to try, but for some reason never got around to it until now. I feel so ashamed. I made two minor changes - I used half gruyere and half monterey jack because OMG is gruyere expensive. Also I added half of the cheese to the bechemel sauce before pouring it over the casserole to get the cheese flavor through the whole thing. I think in the future, I might use scallions instead of white onions to give it a bit more "green" flavor and more bite. Otherwise, an excellent recipe!

Fruity Curry Chicken Salad

I made this for my sister's baby shower. The shower wasn't supposed to be at my house, but an emergency required that we change the location. So I needed something fast, easy, and FANTASTIC that would feed 60 people. This did the trick and then some. On a croissant with a bit of lettuce, everyone thought I'd had the shower catered. When it got out that I had made the sandwiches on the fly the night before, amidst a flurry of preparations for the shower, I got 15 requests for the recipe. Thank you so much for saving my sister's shower. I'm not joking, this recipe really saved the whole day.

Flourless Peanut Butter Cookies

My husband's grandmother has refused for YEARS to give me her peanut butter cookie recipe. I've tried recipes over the years to try to make her cookies for my husband, always failing. Finally I saw this recipe, and decided to give it a shock. My husband's words when he tried them were "she finally caved?" YES! SUCCESS!!! Thank you!!!

Chicken Tacos

Based on some of the reviews here I made some changes. In place of the Worcestershire sauce, which I really only like on beef, I used some cumin, corriander, chili powder, crushed red pepper, sea salt, and fresh black pepper. I also used fresh lemonade, (real lemons juice, simple syrup and water) and a lot of lime juice. I marinated the chicken in the lemon/lime juice for an hour, and I also simmered it until there was very little liquid left, like others have mentioned. My family really enjoyed it. Although I made some changes, the recipe was a great starting out point. Thanks!

Absolute Mexican Cornbread

Amazing. My family loved it. I took half the pan to my husband at work, he called me on my cell on the way home asking me to type up the recipe, because three guys he shared it with wanted to give the recipes to their wives. Thanks for a GREAT recipe!
