Ghirardelli® Dark Chocolate Truffles

I rolled these in toasted coconut, chopped hazelnuts, cocoa powder, and sprinkles, and they were gone so quickly I barely got a taste. DELICIOUS, and intensely easy. Thank you!!

Oven Roasted Greek Potatoes

I was very disappointed with this recipe. Despite making a special trip to the store to make sure I had all the spices listed, taking the time to marinate, and basting twice during cooking, the result was decidedly bland, except for the overpowering rosemary. I definitely will not try this again.

Jean's Swedish Faux Meatballs

i used store-bought vegetarian meatballs, so i'm only rating the sauce, which was good, but a little on the thick side and i wish i'd made a bigger recipe--there wasn't enough extra sauce for the noodles.

Baked Flan

Made this for my brother's birthday and he not only had two enormous pieces, he ate it for breakfast the following day, and then again for dessert. The top browned quicker than I liked, so I took it out before it was completely set and let it continue cooking in the water bath. The texture was perfect. A tip about the sugar, though--make sure there aren't lumps before you start cooking it! I had a few lumps left when I baked it. It still came out well, but if you're a perfectionist be warned that lumps don't melt! And don't be worried that it will stick to the pan. Mine came right out with just a slap on the bottom, no breaking or sticking.

Easter Egg Nests

Adorable, easy, and fun for kids and me ;) I also made some with toasted coconut (425 and WATCH IT CAREFULLY!!) and peanut-butter melting candies, so they not only were brown and lifelike, but SO GOOD. Thanks for the idea!!

Quick Pasta Sauce

Curry Chipotle Satay

Made this for my boyfriend's birthday since he ALWAYS orders beef satay at thai restaurants, and he practically got down on the floor and kissed my feet. may i just remind you to SOAK THE SKEWERS, though!! this step CANNOT be skipped or even done halfway.. i forgot to until i was ready to broil everything, so even though i soaked for a minute, most of my skewers caught on fire. apparently the most delicious thing i've ever cooked, regardless of skewer fires, though!

Miso Soup

incredibly easy. one of my boyfriend's favorite soups, and he said it was better than at his favorite japanese place! we got yellow miso, but had to ask for help--nothing had english names on the packages. great, simple recipe, thank you!

Tofu 'Fish' Fillet Sandwiches

I made these for myself and my vegetarian sister, along with two meat-eaters, and every one of us was impressed with how good they were, especially taking into account the simplicity of the recipe. My only advice is to slice the tofu a little thinner than recommended (about six slices per package of tofu), or they get a little bland. I only gave four stars because the tartar sauce was inedible. Sorry!

Chocolate Fudge Buttercream Frosting

everyone's favorite.. the cake i made was simply AWFUL, and this frosting was so good it almost saved it. the second time i made this i actually used just butter, as i forgot to get shortening, and it made it very rich, but still delicious. this has been my best allrecipe find so far..thank you!

Heavenly Chocolate Mousse

I forgot this was on the stove and managed to cook the yolks and nearly burn the chocolate, and it was STILL delicious (after a bit of straining, of course--yuck cooked yolk bits!). I can't think of a more decadent dessert than this mousse topped with fresh whipped cream and some shaved chocolate.

Rich and Simple French Onion Soup

This was AMAZING, but "do not brown the onions"?!?!?!? Are you INSANE? That's where the french onion soup gets its flavor!! I substituted vegetable broth for the beef broth and caramelized the hell out of the onions for my sister's thirtieth birthday dinner and everyone LOVED it. For more everyday dinners I would cut the butter down, though..maybe halve it. It is EXTREMELY rich. Perfect for a special occasion, a bit overwhelming for Tuesday night dinner. And be patient--caramelizing onions takes forever, but it's very much worth it.

New York Cheesecake II

A very good basic cheesecake. I added lemon & orange zest and juice because I love a citrus flavor and bakes @ 425 for 20 minutes, then 200 for 40 and left in the oven overnight. Another day in the fridge and the texure was PERFECT. I did get a crack, but it was tiny, and I'm not willing to risk soggy crust with a water bath.
