Janet's Rich Banana Bread

I used whole wheat and bean four because that's what I had and it still turned out super yummy! My husband nor his brother had any idea I used bean four and they thought this bread recipe was the best I've made yet. I would definitely make it again. Oh and I cut back a bit on the sugar and used brown instead of white. Very moist

Blueberry Muffins on Steroids

These were very healthy, hearty and yummy. Nest time I might add a little more sweetener in them, although these were great with a little butter and honey. The only changes I did was use greek yogurt (that's what I had) and replaced one cup of the hot cereal with a mixture of almond meal, millet, bean flour and flax. I doubled the batch so it didn't make that much of a difference I just wanted to use up some ingredients. My one year old son enjoyed these too!

Wild Rice Harvest Casserole

Did as some others suggested: Added a brown rice mixture and baked a little longer. I added both fresh and dried cranberries too. It was super yummy and even the kids loved it.

Make-Ahead Vegetarian Moroccan Stew

This was a hit! I used all sweet potatoes because that's what I had and healthier than regular potatoes. My husband and in-laws all loved it. I made rice with it the first night and pita bread the second night. I loved the spices as I've found many dishes can be on the bland side. I will make this one again for sure.

Barbeque Tempeh Sandwiches

Very tasty. We ate them like sloppy joes the first time and then as a dip with chips and a dallup of greek yogurt on top. It had great texture with added red kidney beans.

Lentil and Green Collard Soup

Very tasty. We used green lentils because thats what I had and we added some red pepper flakes for a little spice and some garlic. We also cooked the greens and lentils in organic low sodium chicken broth. It was hardy, healthy and made a great meal with lots of left overs.

Addictive Pumpkin Muffins

Very yummy! I only used 1 c. sugar though and it was still sweet, especially with the applesauce and raisins. I also added 1/4 flax for extra fiber, and used one cup of bran, one cup of white flour and the rest whole wheat. I don't think these changes (other than the sugar) made much a difference in the flavor of these original muffins. They were really good and I will definitely make them again!

Low-Fat Blueberry Bran Muffins

I made a double batch to give some away. I added some flax and millet to give a little extra crunch and used egg whites to lower calories, but changed nothing to alter flavor. Super healthy and yummy warm with a little butter. Will definitely make again.

Dijon Thyme Chicken

An amazing dish: easy to prepare, simple to cook, and absolutely delicious. I also had penko instead of traditional western breadcrumbs, but I just shredded a bit of asiago cheese into the mix and it really helped. I think the only thing I would do differently in the future would be to broil the chicken for a bit just to "crunch" up the top.
