I followed this recipe 100%. It seemed like too much oil, but I did exactly what the recipe says, and I usually have good luck baking! I didn't overmix, properly preheated... and they FLOPPED! Seemed really oily and not enough flour or something. I coursely grated the carrots, didn't seem like they were watery or anything. Usually when I bake with soda/powder - I notice the reaction taking place, but I didn't notice that when I made these. So frustrating, had to make box cake last minute for birthday. (i made cupcakes initially, assume that shoudn't matter). I think applesauce would work out better for some of the oil.
