Pizza Dough I

Reviewed: Apr. 4, 2011
Very good started recipe! I followed another reviewer's recommendations and it turned out very flavorful! 1 1/4 cups warm water, 1 pkg active dry yeast, 1 tblsp sugar, 1 tsp thyme or Italian seasonings, 3 tblsp olive oil, 3+ cups of flour, 1 tsp salt. Mix water, yeast, sugar & oil in mixer bowl. Then add flour & salt. Mix-knead for 10-12 minutes, sprinkling with flour to keep from sticking to bowl. Dough should be elastic & smooth. Place dough in oiled bowl, cover dough with oil, cover & let stand 1 hr at room temp. Then divide dough 2 equal parts roll into balls, cover with damp towel & let stand another 10 mins. Use immediately. Don't forget to poke holes into dough with fork once rolled onto pan to let steam escape while baking.

Basic Microwave Risotto

Reviewed: Aug. 23, 2011
Very good! Never had risotto before so don't really know what to compare it to. :) We used Jasmine rice so it took about 5 minutes longer in the microwave and maybe another cup of water before the rice was soft. We ended up forgetting to add the Parmesan cheese until we were all eating it. So we just sprinkled some on our plates. Really, it tasted better with the cheese, but maybe it would have tasted good mixed up correctly like the recipe called. Very good and will make again!

Chicken Cordon Bleu I

Reviewed: Aug. 23, 2011
Used apple juice instead of wine and I did the egg dip/ roll in bread crumbs to the chicken. I cooked it at 400 for 25. (It ended up resting for an extra 10 minutes). Very yummy! Didn't make the gravy, but could have. The kids loved it too, they hate Swiss cheese but didn't realize that was the cheese in it! Win! Served it will Caesar salad and microwave risotto from this site.

Asparagus Roll-Ups

Reviewed: Oct. 24, 2010
Even though the recipe is quite simple, it is bit time consuming with rolling the bread and whatnot... but SO good!!!! I made these to a T and it was fantastic! (Oh I didnt blanch them because I hate soggy asparagus, so I just wrapped them in a damp paper towel and cooked them in the microwave for about 20 seconds knowing they were going to cook in the oven... and it was perfect!! Not mushy like some reviewers say! )

Apple Crisp II

Reviewed: Apr. 4, 2011
I made this with half the water and 2x the crumble (1/2 on top and bottom) I wish I hadn't cut down on the water by half because it was a little dry, but im sure that was because i doubled the crust. It was still very good! I used Fuji apples because that's all i had, next time I make it I will use granny smith and make sure to keep the water as stated! Yummo!

My Amish Friend's Caramel Corn

Reviewed: Mar. 16, 2011
INCREDIBLE!!!! WOW Was this good! I air popped mine then mixed it in a grocery store bag before I baked it. You might want to increase the temp while baking because it seemed like the Carmel wasn't melting until we increased our temp! Everyone loved it! Not way too sweet! Just perfect!
