Delicious Black Bean Burritos

This made a very yummy black bean and chicken burritto. I doubled this recipe and did not add jalapenos, but added a bit of cumin and red pepper flakes. I also added some chicken broth at the end because it seemed really thick. CHICKEN... I took 3-4 frozen chicken breasts and boiled them until cooked thru. Shredded it and added about 1/2 cup of Pace Salsa a good squeeze of lime juice and lemon juice. some dried celentro, a couple dashes of chili powder, and some cumin powder. Made the burritos with the beans, then chicken and some Colby Jack cheese all wrapped up! Yum!

Greek Chicken

Very good... we broiled the chicken since it was too hot to grill outside. I made "Suddenly Salad" Basil and Pesto pasta salad to go with it. Mixed it up with some feta cheese and it was really good. Not all that great by its self but good when all mixed together.

Chicken Pesto Paninis

Used our George Forman. Used chabata bread. Used deli chicken and Colby with pesto on the bread. Sprinkled with diced green pepper and onion. Grilled till melted! Yum!

Gazpacho II

This was very good! Directions are a bit confusing and we ended up putting all the diced veggies in the soup by accident. But it was fantastic! Had some croutons with it! Yum!

Pico de Gallo

This was SO Good! Fantastic! Not really hot, just a nice balance. I did "de-goup" the tomatoes by taking out the slimy stuff to make sure the Pico stayed dry and not too gooey like salsa. Worked like a charm!

Brazilian Lemonade

These were fantastic! Not too sweet! We used splenda instead of sugar, but other than that, to a T! We made an adult version and used 1 cup rum & 2 cups water for the liquid. Yum!

Rubbed and Grilled Pork Loin

We brined it first for 24 hours in 6 cups of water, 1/2 cup brown sugar, 1/2 cup of sea salt. Let that sit in fridge overnight. NEXT DAY:: Then took it out and seasoned it as this recipe says and grilled at 500 degree direct heat fat side down for 10 minutes. Then flipped fat side up for 10 minutes. Then moved to indirect heat (on grill burners that are not on) got temp down to 350 and let grill for an hour. Pulled it when internal temp got to 147. Let sit for minutes and sliced. DELICIOUS!

Fresh Rhubarb Pie

This was fantastic! Followed the recipe to a T. Even did the layering of the sugar, rhubarb, sugar. Turned out so wonderful! I used this will the "Ruth's Grandma's Pie Crust" from this site and it was an outstanding pie!! YUM!

Stuffed Peppers My Way

These tasted ok, but it just isnt a stuffed pepper. Very Italian flavor. Needs more tomato flavor and some beef. Just not our style.

Cabbage Jambalaya

Wow was this suprising! No beef, just a ring of smoked sausage. Bag of cole slaw mix, Onion, celery, garlic, can of rotel, can of tomatos, and a cup of water with beef bulion in it. I added some sprinkle of Old Bay and Creole spice... a bit of Thyme, boiled for 30ish minutes... Made rice on the side.

Garlic Chicken

Very good... I cut the breasts in strips... i baked them a bit long so it was a bit dry, but the flavor was great! No oil... I diped the chicken in italian dressing and then dredged them in bread crumb/parm mix. Yummy!

Corn and Zucchini Melody

Very good! We all enjoyed it! I used Turkey bacon peices, 1 zucchini, corn, 1/2 onion and a small yellow peper. Very good! Did not add any cheese! The flavors are incredible!
