Red Velvet Cake

i made this for my mother-in-law's birthday. I also cut it in to 4 layers and put the icing in between them. It was pretty. I thought the flavor was pretty good. It was a bit dry on the edges but i wonder if that was because i didn't ice the sides to show off the layers? Anyway, Pretty good. The icing was light and fluffy.. yummy.

Banana Pancakes I

The recipe did what it said... made banana pancakes. My family thought they were gross. We followed the recipe to a T and added a little Vinnilla. They cooked just fine... fluffy and light. (HERES A TIP: when u mix the batter of pancakes, do NOT overbeat. just mix a bit. If you over mix, the will be heavy. You almost want to under mix pancakes.) We just did not care for the taste even though we doubled the recipe and only added 3 bananas. I would say doubling the recipe would give you 18 average size pancakes. We will not make this again.

Burrito Pie

I thought this was pretty good. I will probably skip all the peppers next time. Including the ones in the tomato. It was a bit spicy so next time i will get reg tomatoes instead of them with peppers in it. I too did not mix the beans in, instead just use them as a layer by smearing them on the bottom of the tortilla layer.

BBQ Chicken Calzones

It was good. but felt they would have make small rather-doughy calzones. So instead we made pizzas out of htem. They were really good!

Hot Artichoke and Spinach Dip II

OHHHHH MY GOSH!!!!!!!! YUMMMMMMM! This was SOO good! I also added mostly sour cream. And I mixed the cheese right in (With a littel on top for decoration.) And by accident used dill weed instead of basil.. but it worked really well!! The only complaint i have, is the cloved of garlic i used were really big. I wish i had not used the big ones. But next time I will be more selective on the size. It was still wonderful, but a tiny bit heavy on the garlic. (But that was my fault not this recipes!) I made it the day before and heated it in the oven for about 30 minutes. I added a splash extra of milk so it wouldnt get dry. I will definatly make this again!! Wonderful!!

These were REALLY strong. Wow! I added about 1/2 shot of grenidine (sp?) to soften it. Packs a punch!

Secret Midnight Moon Better than Chocolate Sex Cake

Okay. This is really really good. When it was fresh and warm, it wasn't quite as good, but when it sat in the refrig overnight, it totally tasted amazing. It is really rich and dense. I did not have any burbon, so instead I used Starbucks Cream Liqour instead. Good stuff!

White Bean Chicken Chili

I thought this was okay. It seemed more like spicy vegetable soup instead of chili. Not bad, but didn't have that thick "chili" feel to is. It was good and healthy, but if you are looking for Chili, this isn't it.***Update: Made this tonight, I'm giving it 5 stars, even though I tweaked it to fit what I had on hand: I used 1 can of sweet corn. one can of diced tomatoes with chopolte peppers, and 32 oz of chicken broth. I took the olive oil, onion, and garlic, and simmered until the onion was soft. Then I added green salsa, diced green chilis, 32 oz box of chicken broth, 1.4 lbs of chicken breast tenders. Simmered for about 5 hours. Then I added the beans, and the corn. I skipped the jalapeno 50% of my family called it a favorite. One called it "meh", and one called it good but hot. I call it my favorite chili recipe.

Buttercream Icing

This was really good! I took advise from other reviews and ONLY used Butter. I did NOT use shortening. I also increased the vanilla to 2tsp and reduced the sugar to 3 cups. Although no one else thought so, I thought it was a bit thick, and i think it may have been that my butter was not at room temp ( i had to warm it in the microwave.) When i make this again, i will make sure the icing is warmed properly. Try this recipe! It is really good!

Simple White Cake

This recipe is SO WONDERFUL! (Be advised that this recipe as it stands is for a 9x9 cake not a 9x13 large cake.) I "taste-tested" it this past weekend to see if it was good enough to use at my daughters B-Day party... and OH MY GOSH everyone loved it! It is a dense cake, so if you are looking for light and fluffy, keep looking. But If you are looking for really good 'wedding cake' type of cake... here it is! I put on the "Buttercream icing" from LISKAGIRL on this site and it was really good combo!! One person said the cake with the frosting tasted almost like a really good sugar cookie! But it was not overpowering sweet. I followed other reviewers and added an extra 1/4 cup of milk. I also beat the heck out of every step. MAKE SURE you beat the sugar and the butter for 8-10 minutes!! BUT IT IS SOOOOO WORTH IT!! I couldn't keep away from it!

Award Winning Soft Chocolate Chip Cookies

I was pretty disappointed with these. they were really soft, but almost like cake, not cookies. The flavor was kinda boring even though I took the suggestions of others and added 2 Tbls of vanilla. I will stick with my Toll House recipe.

Grilled Bruschetta Chicken

I thought this was pretty good! The Bruschetta was wonderful! The chicken was a little bit dry. (Couldn't grill, had to use the stove top) The flavor was really there, I just made me want to put the tomato mixture on some crunchy bread! Will probably make again. (Would defiantly make the mixture and put it on crunchy Italian bread as an appetizer!)

Salsa Chicken

EXCELLENT!!! WOW! This was so GOOD! I cant beleive that flavor came form such a simple recipe! And it was so tender I could cut it with a butter knife! YUM!! I also used a whole packet of taco seasoning and let the chicken marinade in it and a bit of water for about an hour. Then put it in a 8x8 pan with the other ingredients! Will defiantly make again soon! Thanks for the recipe!

Simple Mexican Rice

This was good and simple to make. I also added 1/2 tsp of salt and reduced the cumin to 1 tsp. I thought it could use a little more something... don't know what. (A little Sour Cream from my plate helped.) I might add a little cheddar cheese to it next time to give it some more flavor. I made this as a side to the "Salsa Chicken" on this site which is awesome!

Big Al's K.C. Bar-B-Q Sauce
