Magpie's Cucumber Sauce

Baked Zucchini Chips

These turned out fantastic! We all ate them! I had a huge zucchini from our garden and this was great! Used half panko/ half bread crumbs to give an extra crunch. Also added some garlic powder, Italian seasoning, and some onion powder to the crumbs/cheese mix. I had to make a second batch of the dry mix since we ran out half way thru. Probably will double that part if I have another huge zucchini again! Really yummy!

Black Bean and Corn Salsa

This was very good! And easy to make! We ate the whole bowl! Didn't have any peppers so I just used one can of black beans and one can of corn. It only had a chance to marinate for about 2 hours before we ate it, but it was really yummy!

Busy Night Turkey Taco Soup with Avocado Cream

Grilled Sausage with Potatoes and Green Beans

This was fantastic! This is step by step what I did so I can repeat it later. Preheat the oven to 425. I used fresh green beans snipped and broke in half. I sauteed the sliced smoked sausage with a couple shakes of Worcestershire sauce for 5 minutes while cutting the potatoes and onion. Put those in in a aluminum foil lined large glass dish. In the same pan, I sauteed cut red potatoes in a T of butter, salt and pepper for about 4 minutes, poured them in with the sausage. Sauteed the fresh green beans with about 2 T garlic and olive oil for about 4 minutes. Put those in with the sausage. added maybe 1/4 cup water and 1 large onion cut in thick strips. Stirred it all up. Covered with foil. baked for 25 minutes. Checked for potato done-ness with fork... Add 10 minutes with foil off. Delicious!

Korean BBQ Chicken Marinade

This was really great! I used half the sugar. And instead of 1 cup of soy sauce i used 1/2 cup soy & 1/2 cup sugar. No Chili Paste so just threw in a couple sprinkles of Red Pepper Flakes. Let sit in fridge for hours and broiled for 13 minutes. Very good. This would be good a a sauce for Chicken and Broccoli as well! Yummy

Yummy Honey Chicken Kabobs

THIS WAS WONDERFUL! Followed it to a T. I did make the sauce for 12 and used only 4 fresh chicken breasts. Used some of the reserved sauces to baste during grilling. I did separate the chicken from the veggies. That way I didn't have to worry about not cooking the chicken long enough. Skewered the veggies by them selves as well. I did put a slice of onion in between the chicken to add flavor. Surprisingly, the onion was everyone's favorite! Even my youngest who HATES onions ate onions! VERY VERY GOOD! Will make again.

Braised Balsamic Chicken

This was really good and pretty simple! I love one pan dishes! I followed the recipe to a T except that i added only half balsamic and half chicken broth so my kids would eat it. Served over white rice with salad! YUMMY!

Waffles I

This was a fantastic and quick, easy waffle recipe! it made 4 full and 2 smaller Belgian waffles. I followed the recipe pretty much except added 1 1/2 t Lemon juice to the milk. Added only 1/4 cup oil. Added 1/4 cup splenda instead of real sugar. A good couple shakes of cinnamon. I also beat the eggs to give them some fluffiness. Poured short of 1 cup in the belgian waffle maker. kept warm in oven til ready! So YUMMY!

Strawberry Torte

This was so easy and so good! Followed as directed but added 1/2 tsp of almond extract to the cream mixture. Also cut up two fresh strawberries to mix in the cream. So YUMMY!!

Stuffed Pepper Soup I

Added some onion with the green pepper. I added the rice uncooked, but next time I will cook it separate. Also, too much tomato sauce. Gonna use diced tomatoes and beef broth instead of some of the sauce. Very good. And used worshire instead of soy.

These are fantastic! I cooked the onions in some butter for just a couple minutes. Added maybe only 1/4 cup brown sugar. And used pre cooked bacon. Yummy!

Wow was this good! I did not add 1/4 cup of chili powder, partially because i was out but also becuase it would have made it too spicy. I probably would have only added 2 T. Other than that, to a T.

Garlic Green Beans

These were very good. I think next time I would add some garlic powder instead of minced garlic because sometimes you got a chunk of garlic. But I will be making these again.
