Easy Garlic Broiled Chicken

My picky teenage daughter loved this. I used Audra's recommendation to halve the fat, and substituted 1 T olive oil with 2 T butter. It was still very moist with lots of pan juices. I followed LindaK's suggestion and avoided the broiler. I baked boneless chicken thighs in my convection oven at 375, turning them over after about 12 minutes.. Done in 20 minutes. I didn't have parsley, so I omitted it. Regardless of these minor changes, the soy garlic butter is a great concoction. This will definitely be a regular addition to fast and easy week night dinner menu.

Baked Teriyaki Chicken

Great for the whole family! I made this stove-top rather than in the oven. Just a little olive oil in a large saute pan over medium to high heat. Browned both sides, then turned the heat to medium. Added more sauce as in the directions for baked, then added the rest of the sauce at the end to heat it with the chicken before serving. Agree with other reviewers that you need to double the sauce. I made the sauce as per the instructions, but had half the number of chicken thighs. Easy and delicious.

Paella II

I've made this a few times now, and learned one important lesson. Don't make this if you don't have the fresh tomatoes. The flavors did not come together without them. I recently made this with chicken and no seafood, and liked it just as much. This dish is a favorite of my whole family, even my son who doesn't like rice - he once tried to order paella without the rice in a restaurant!

Parmesan Chicken

My husband loves this chicken recipe better than any dish he can get in a restaurant. It's incredibly easy, looks beautiful and tastes even better. Whatever you do, don't skip the Parmesan! The cheese elevates this from just another breaded chicken to something extraordinary. I made my own bread crumbs from dried bread and italian seasoning, as I prefer them over the finely ground (read: pulverized to powder) products I usually find in the store. I would love a recommendation.

Asian Orange Chicken

The sauce was excellent - a great combination of spice and citrus. Everything worked for me except the breading. This was probably "user error" as I rarely bread anything with flour; I gave up and just browned the chicken with the seasonings but without the flour. I also stir fried vegetables and added them to the finished dish, served over brown rice. This dish was a big hit with my family.

Country Apple Dumplings

Exceptional taste and fun to make! I baked a double batch of these, and they were gone in a day. I only had 1 can of ginger ale, which worked very well. I enjoy baking yeast breads, so I made the dough from scratch using a simple recipe of 4c flour, 1 pkg (.25 oz) yeast, 1 Tbsp sugar and 1.5c warm water, allowing 20 minutes to rise before rolling out and cutting into crescent shapes. Will definitely make these again.

Creamy Chocolate Frosting II

This was exactly what I was looking for: simple buttercream-style frosting that I can make without a lot of fussy ingredients. But, beware that there's little to hide an off-taste chocolate or butter. I only had sweetened chocolate, so I reduced the sugar to 1 cup, and I used milk instead water as I prefer the taste. If your frosting starts to stiffen while spreading, beat in more liquid a little at a time until you achieve the desired consistency.

Chocolate Buttercream

I made this frosting to use on kids' cupcakes. Everyone loved it, but I gave it 4 rather than 5 stars, as there is no way I would serve frosting with raw egg in it, especially to children. I omitted the eggs, and after blending in the chocolate, I substituted enough milk to reach the desired consistency, then beat the mixture for 4 minutes. I also omitted the salt, which no one missed.

Traditional Coffee Cake

Excellent! I wasn't sure how dipping and rolling the balls in butter and cinnamon/sugar was going to work out, but it was great. It eliminated the dry, tasteless bottom half, which is a common problem with other coffee cakes. My cake turned out more like a cinnamon bread that was moist and flavorful all the way through, with a crunchy top. Because I like to use different flours, I substituted 1 c almond flour and 1/2 c whole wheat flour for 1 1/2 c all-purpose flour. Like other reviewers, I found that I needed to add more all-purpose flour to make the dough stiff enough to knead. I think using the Bundt pan is important -- I used a regular 9" pan, and the middle of my cake fell a bit.

Easy Pasta Primavera

This was really not to my liking. Even with addition of salt and pepper, and extra oregano and garlic powder, it just did not taste good. I should have looked for a recipe with a better rating, but this one looked so simple that I ignored its mediocre 2 1/2 stars.

Chicken Fettuccini Alfredo

Great recipe. To lighten the saturated fat and calories, I substituted olive oil for half the butter, omitted the sour cream and half-and-half, and used 4 cups 1% milk. The sauce still thickened nicely, but was not heavy. I had no Italian seasoning so I mixed 1/2 tsp each sage, parsley, basil, rosemary, oregano and garlic powder. I found the sauce a little lumpy because of the diced onion, so I strained the sauce before serving. It retained the sweet onion taste, but had a smoother texture. As with other reviewers, I added salt and pepper to the chicken: sprinkling coarse sea salt and coarsely ground pepper before cooking. I didn't have colby or jack cheese, so I used Sartori Reserve BellaVitano cheese which is a mix of aged parmesan and cheddar cheeses. Finally, I omitted the mushrooms and tomatoes because my kids don't like them. My whole family loved this dish.

Butter Cake
