Janet's Rich Banana Bread

This made a tasty banana bread. I mashed the bananas instead of slicing them and I used whole wheat flour instead of white.

Martha's Cornbread Dressing

This is my go-to dressing recipe. In fact I'm making it for a potluck this weekend. The recipe is excellent as is but I usually add a diced green bell pepper and substitute 4 tsps of rubbed sage for the ground sage.

Bill Clinton's Lemon Chess Pie

Last night, I made this and another dessert for a church luncheon and if I had known how good this pie was going to turn out, I would have made two of these instead. This is a rich dessert with a pleasant lemon flavor that's not tart or overpowering. This pie would be perfect served with fresh mixed berries on the side.

Butter Cake

The first time I made this cake, I did not cream the butter and sugar long enough and it produced a cake the was coarse in texture, much like cornbread to quote some of the reviewers here. When I made the cake a second time, I creamed the butter and sugar for about 5 minutes, then added the eggs and vanilla and mixed until just blended before adding the flour and milk, stirring by hand. This produced a cake with a much finer texture. Both cakes were yummy though! It also helps to lightly spoon the flour into the measuring cup before leveling instead of scooping out the flour with the cup. You use less flour this way and it produces a moister product. And finally, both cakes were done waaaaayyyy before 50 minutes. The first cake was baked in an 8x8 pan and it was a tad over done at 35 minutes. I baked the second cake for 25 minutes in a 9x9 pan and it came out perfectly.

Cherry Crisp

This recipe was pretty darn good! Because I'm a diabetic, I did make some changes: I used no sugar added pie filling, whole wheat flour, Splenda brown sugar blend, real butter, and only 1/4 teaspoon of nutmeg. My friend, who is not a diabetic, ate the whole dish in one sitting minus the small portion I had! I'm definitely adding this to my repertoire.

Tartar Sauce III

I love this recipe! I will never eat store bought tartar sauce again. I am a diabetic so I did use sweet pickle relish made with Splenda. Other than that, I didn't change a thing. It is perfect as is.

Kentucky Biscuits

I made these biscuits with whole wheat pastry flour and they turned out great. I did increase the buttermilk to 1 cup as a result. I come from the Bisquick School of Biscuit making so I only kneaded these 6 times, I think. They were light and fluffy.
