Chicken Fried Chicken

We now make this once a week. Everyone loves it. If I buy the thick breasts, I split them down the middle (butterfly like) I flour first (which I season, use your imagination) then dip in egg (I need 2 eggs) I used crushed club crackers the first 3 times I made this (which was soooo good!) but this last time I used chicken in a biscuit crackers and this put it over the top! I used a med hi heat and just cooked until they were golden brown, they were perfect (let sit for a few min on paper towels before eating)

Tater-Dipped Eggplant

This is now my favorite way to make eggplant. I have also used this to make moussaka and shepard's pie (using the eggplant on the bottom) I tried it with green tomatoe's and since that was so good, I'm going to try zucchini!

Blueberry Pie

This just could not be more easier or make a more delicious pie! I gave this recipe to a friend who wanted to make them for a bake sale auction. Her daughter thought it was so good, she wanted mom to go buy them back! ;-) I put an egg wash on the crust and sprinkled with sugar. Wish blueberries were in season all the time with this recipe!

Raspberry Banana Bread

This was so moist! I whipped up cream cheese, some butter, fresh raspberries and a little 10x sugar in my food processor to use as a spread for the bread. (It doesn't need this though) I took this to work and it was gone in an hour. This will always be my most favorite banana bread recipe.

Pickled Hot Peppers

This is the best basic recipe. We add peppercorns, dill seed and mustard seed. We don't do the bath, just let it sit in the fridge for a week or two and then they will be gone.

Chili I

This was the best chili I have ever made! I cut the brown sugar down to 2 T and used whatever beer I had (which wasn't dark) and I couldn't believe the flavors! Gave the recipe to 2 friends of mine who also made it and said it was the best! The sauce is so dark and rich! Served it at a party with every fixing you could imagine and it was gone in a flash. You really need to try this.

Chocolate Zucchini Cake I

This was incredible! I made a chocolate cream cheese frosting (but you don't need it) and took it to work. Didn't tell anyone what was in it and it was gone in 2 hours. Then they couldn't believe zucchini was in it!

Fresh Strawberry Pie I

Best strawberry pie I ever had. After you add the gelatin, put the pot in a cold water bath, stirring the whole time, then pour over strawberries. Only takes about 5 minutes to do this step. I like the shortbread crust the best. The Strawberry Kewi Jello is awesome with this pie too!

Strawberries with Balsamic Vinegar

You HAVE to try this! The balsamic vinegar gives it a wonderful flavor. Don't let this one ingredient stop you... you will be SO surprised! Let it sit for 2 days and then spoon over ice cream (use a very creamy vanilla) My friends couldn't believe there was vinegar in it. Wonderful recipe!! Would make the most excellant strawberry shortcake.

Lime-Tarragon Grilled Chicken

Fruit Dip II

I make this with Marshmellow Fluff instead of cream (you do notice a difference) I also add 2 tsp of orange juice or any other type of flavoring that you want. My brother says this stuff tastes good on ice cubes! I think he was just looking for a host for this heavenly dip!

Totally Tangy Baked French Fries

These were incredible. We used a jalepeno mustard which gave it just the right kick and left out the chili powder. Also used a little vinegar instead of the lime juice (took someone elses advice on this) Will use this recipe alot!
