Slow Cooker Tapioca Pudding

I made this twice. I set a timer for 10 minutes and stirred the pudding, each time setting the timer for another 10 minutes. As the pudding started to get thicker this became more important because the pudding would settle at the bottom. The first time I didn't soak the tapioca and about 1/3 of the tapioca had gritty centers. The second time I soaked the tapioca in milk for about an hour and the tapioca pearls were all cooked. Both times the pudding was thick and had a delicious flavor. Following the recommendation of other reviewers I added 1/2 cup sugar the second time and it was just as good as 2/3 cup sugar. However, I won't be making this again because the texture of the pudding was mushy. Whether I soaked the tapioca or not, both times the tapioca pearls were not firm balls like they are when I make this on the stove, instead they fell apart at the slightest touch.

Favorite Old Fashioned Gingerbread

Baked Kale Chips

Summer Fruit Salad II

Thank you for posting this recipe. It was the inspiration I needed to make my fruit salad. It did have a little too much cinnamon for my taste, but that is easily fixed next time - just taste as you go.

Southern Fried Cabbage

This was good. The munchkins asked for seconds! I left out the sugar and added small cubed potatoes. Next time I will cook the potatoes before adding the cabbage.

Crustless Mushroom-Spinach Quiche

This turned out great. I used peeled asparagus instead of zucchini. A red bell pepper instead of a green one (it made the dish look prettier). Six eggs that almost reached 1 1/4 cups instead of egg substitute. A third of the parsley and thyme because I used dried instead of fresh herbs. About 5 oz of fresh spinach instead of 10 oz frozen/thawed because that is what I had on hand.

Mediterranean Stuffed Swordfish

This was delicious! I used a toaster oven at 300 F on broil for about 12 minutes. I also sprinkled salt on the spinach and both sides of the swordfish.

Royal Icing I

This turned out great. I was in a really big hurry so I didn't measure anything. Just threw the three ingredients in and mixed it up until it was a smooth consistency. I thought I had made the icing too thick but it turned out perfectly. We constructed 4 gingerbread houses with about 3 cups of icing. The icing took about 5-10 minutes to set up and hold pieces of the house together.

Broccoli Salad I

This was delicious! I will definitely make it again. I didn't have any sunflower seeds so I used chopped pecans. I used less than half the mayo sauce and it was still too much. I think 1/3 of the sauce would have been better. I used 1/4 lb of bacon and it wasn't quite enough. Next time I will add a couple more slices.

Brown Rice and Black Bean Casserole

This was great! I didn't have Swiss cheese so I used cheddar and mozzarella. I liked it that way so much that I don't think I will even try it with Swiss cheese. I added 1/2 tsp salt & 1/2 tsp cayenne pepper. The instructions were clear and easy to understand.

Delicious Gluten-Free Pancakes

These were excellent. They were fluffy and had a great flavor. The instructions were easy to understand. I added 1 Tbsp evaporated cane sugar (instead of sugar substitute), real buttermilk (instead of powdered buttermilk + water), and 1 tsp cinnamon. I didn't have any potato starch so I substituted it for tapioca flour. The pancakes turned out great even with the changes I made.

Lime Fish Tacos

Overall, I thought this was okay. The sauce was pretty good but next time I will make more. I should have listened to the other reviews that said the lime juice for the fish was too much. If I use this recipe again I will definitely use less lime juice for the fish.

Tomato Basil Soup I

This was really good but I did have to add a couple things. As a garnish I added avocado and sour cream. The directions should be written with more steps so that it is easier to read. I didn't have any marjoram so I left that out.

Easy Broccoli Quiche

I didn't need to change anything. I did leave out the 1 Tbsp of butter just because I didn't think it was necessary. I also did not use a pie crust because my husband has a gluten intolerance and I didn't have time to make a gluten free pie crust. The quiche turned out great even without it.

My family thought this was great. I used fresh instead of dried shiitake mushrooms. I used 4 eggs because that was all I had. The directions should be rewritten to include more steps and to specify whether or not the pan is covered or uncovered.

Manhattan Clam Chowder

This was pretty good. Although I used fresh potatoes and clams. I did not use carrots. I used diced canned tomatoes and 15 oz can of tomato sauce instead of tomato juice. I also added cilantro. I was in a hurry to make dinner so I used the stove instead of a slow cooker. Instead of parsley and thyme I used oregano and basil.

Chicken Chili I

I didn't like this. The cloves were overpowering. I might add just a pinch of cloves, but no more. To make this soup edible I added fresh chopped cilantro and 2 tsp more salt and garnished with sour cream. Since I don't have a crockpot big enough to make this I pressure cooked the beans and otherwise followed the directions. I did not add black pepper or jalapeno because I don't like black pepper and my children won't eat spicy food.
