Chef John's Sloppy Joes

This turned out great. I followed the recipe but I didn't add things in exactly the same. I left out the cayenne pepper and added several more dashes of Worcestershire sauce. I added finely chopped green bell pepper and orange bell pepper; they added a nice touch of color. Following the suggestion of one reviewer I only added 1 tablespoon of brown sugar instead of 2 tablespoons. I'm glad I did because the sloppy joes were still slightly sweet but not too much.

Black Bean and Corn Salad II

Everyone loved this salad. I used a can of corn, 1 can black beans, only 2 Tbsp olive oil, 1/2 tsp salt and 1/4 cup chopped cilantro. I left out the cayenne pepper. I was in a hurry and so instead of making the dressing separately I threw everything together and mixed it up. I did add the avocado at the end and gently mixed that in. I served this salad as a side dish and filling for 'Pico de Gallo Chicken Quesadillas.'

Pico de Gallo Chicken Quesadillas

I ended up with a different meal than what the recipe makes but everyone loved it anyway. I made the pico de gallo as the directions stated. For the chicken we made a mix of chili powder, cumin and oregano and cooked the chicken with the spices and some olive oil. I left out the onion, bell pepper and garlic mix and used cheddar cheese instead of Monterey jack cheese. We put cheese, chicken, and the pico de gallo on the tortilla and ate it like a soft taco. We also had "Black Bean and Corn Salad II" as a side dish.

Spinach with Pecans

This turned out great, but I did make some changes. I caramelized the onions and then removed them from the pan adding them back to the spinach after it was cooked. Instead of water I cooked the spinach with a mixture of chicken broth, oyster sauce and sesame seed oil. The pecans were delicious and added a nice crunch. We will definitely make this again!

Dilled Potato Leek Chowder

As the recipe is written I think it would have turned out to be more like mashed potatoes than soup. Half a teaspoon of dill was too strong, 1/4 tsp might taste better. I ended up using 4 cups of broth and 1 leek.

Cream of Asparagus Soup I

This was wonderful, although I did make some changes. For chicken broth I used 4 cups of water and 4 tsp chicken bouillon paste. I peeled and coarsely chopped the asparagus before adding it to the soup. I weighed the asparagus after it was peeled and trimmed. I pureed the soup so that it was slightly chunky instead of baby food consistency. I added 1/2 cup heavy cream instead of half and half. I think I could add less cream and less butter next time and it would still taste good. Because we are a GF household, I used 2 tbsp rice flour and 1 tbsp almond meal. I did not add pepper or soy sauce since the soup tasted great the way it was.

Sally's Spinach Mashed Potatoes

I decreased the sour cream and butter by half and doubled the dill. We added 1% cow's milk until it was a mashed potato consistency. We left out the cheese and didn't bake the dish. I sauteed the onion with about 1 tbsp butter until it was translucent and then added the chopped spinach and sauteed them together. Mixed everything up and everyone liked it.

Tom Ka Gai (Coconut Chicken Soup)

This turned out wonderful! I am so glad my sister recommended this recipe to me, Sept 2012. I left out the oil, cayenne pepper and turmeric. Things I changed: chicken broth instead of water, 1 Tbsp soy sauce instead of fish sauce, chicken drumsticks cooked in the soup instead of boneless chicken meat, finely chopped crystallized ginger instead of fresh ginger. I think I should add chicken pieces instead of chicken drumsticks, a little more soy sauce and ginger next time. Honey thought the soup was okay, but he would rather have the real thing instead of this version. W thought it was good and K didn't really like it. I ended up eating most of the soup and thought it was delicious.

Delicious Egg Salad for Sandwiches

I added 10 eggs and 1/4 cup mayo, 2 tsp spicy brown mustard, 1 Tbsp chopped chives, sprinkled salt and pepper in but forgot to add the paprika. I loved this and so did my daughter, but my friend said he wanted to be able to taste the mayo and that I hadn't added enough. lol, maybe next time.

Slow Cooker Tapioca Pudding

I made this twice. I set a timer for 10 minutes and stirred the pudding, each time setting the timer for another 10 minutes. As the pudding started to get thicker this became more important because the pudding would settle at the bottom. The first time I didn't soak the tapioca and about 1/3 of the tapioca had gritty centers. The second time I soaked the tapioca in milk for about an hour and the tapioca pearls were all cooked. Both times the pudding was thick and had a delicious flavor. Following the recommendation of other reviewers I added 1/2 cup sugar the second time and it was just as good as 2/3 cup sugar. However, I won't be making this again because the texture of the pudding was mushy. Whether I soaked the tapioca or not, both times the tapioca pearls were not firm balls like they are when I make this on the stove, instead they fell apart at the slightest touch.

Baked Kale Chips

Kids and I thought these were great. I used a generous amount of olive oil and stirred the kale for several minutes so that the olive oil covered it as much as possible. I sprinkled salt on the kale chips after they finish baking.

Summer Fruit Salad II

Thank you for posting this recipe. It was the inspiration I needed to make my fruit salad. It did have a little too much cinnamon for my taste, but that is easily fixed next time - just taste as you go.

Crustless Mushroom-Spinach Quiche

This turned out great. I used peeled asparagus instead of zucchini. A red bell pepper instead of a green one (it made the dish look prettier). Six eggs that almost reached 1 1/4 cups instead of egg substitute. A third of the parsley and thyme because I used dried instead of fresh herbs. About 5 oz of fresh spinach instead of 10 oz frozen/thawed because that is what I had on hand.

Mediterranean Stuffed Swordfish

This was delicious! I used a toaster oven at 300 F on broil for about 12 minutes. I also sprinkled salt on the spinach and both sides of the swordfish.

Royal Icing I

This turned out great. I was in a really big hurry so I didn't measure anything. Just threw the three ingredients in and mixed it up until it was a smooth consistency. I thought I had made the icing too thick but it turned out perfectly. We constructed 4 gingerbread houses with about 3 cups of icing. The icing took about 5-10 minutes to set up and hold pieces of the house together.

Broccoli Salad I

This was delicious! I will definitely make it again. I didn't have any sunflower seeds so I used chopped pecans. I used less than half the mayo sauce and it was still too much. I think 1/3 of the sauce would have been better. I used 1/4 lb of bacon and it wasn't quite enough. Next time I will add a couple more slices.
