Strawberry Refrigerator Cake

This was very good and easy. I went with what I had on hand... Rainbow chip cake mix instead of strawberry. I didn't have enough frozen strawberries, so I used frozen strawberries, frozen peaches, and a tiny bit of fresh pineapple I had left over. I found it hard to soak into the cake as well, and only used 1/2 of the puree (fine, I saved the other 1/2 for smoothies later). And I found it difficult to "frost" with the pudding whipped topping mixture, so I sort of drizzeled it over the cake and it came out very pretty after topping with the fresh strawberries! It was cool and light and very yummy! I will make this again and it's easy to fit into what you've got around the house.

Big Smokey Burgers

Texas Pork Ribs

This was excellent!!! The only change I made was I dumped everything in the crockpot because I didn't think ahead to marinate the ribs. They were tender and tasty, fast and easy. I'm sure they'd be even better on the grill, but crockpot gives you more options and is easy for a mid-week family dinner.

Hash Brown Casserole II

I thought there was way too much potato hash browns in ratio to the other ingredients. I didn't think it had much flavor at all really. Next time I will cut back on the potatoes. I also used saltine crackers instead of corn flakes as one person suggested and it was horrible. Next time I will definately use corn flakes for the topping.

Oven Kalua Pork

I thought we were going to run out this was such a huge hit at my daughter's graduation party! And I way over bought the recommened pounds per person! I followed the recipe, but added about 1-2 tablespoons fresh ginger and about 2-3 tablespoons minced garlic. Also, instead of the oven I used a crockpot and started it partially frozen on high for 5-6 hours. Then I turned it to low for another 4-6 hours and it came out perfectly!

Pork Brine

This was very good!!! I only had 1/2 of the apple cidar vinegar, so I used that and 1/2 as white wine vinegar. I brined it only for 2 hours as suggessted earlier. It had tons of bright, summery but full flavor and was very tender. (My biggest problem with pork chops is that they are tough and these were perfect tenderness.) It was a little salty though, and even decreasing the brining time didn't help with that. I forgot to tell my husband to rinse the chops before grilling, so we'll try that next time along with decreasing the salt just a bit.

Macaroni Salad for a Crowd

This makes a ton! I used black and green olives for extra flavor. And no boiled eggs on top just because I was serving 50 and it was too much work! But I got lots of compliments and I've been eating the leftovers! Delish! This is my new regular for macaroni salad. :-)

Florida Strawberry Bread

This was excellent - and I don't care for bread!!! I had left over strawberries I didn't know what to do with... I used a basket of fresh strawberries. I decreased the oil by 1/4 cup but added about that much water to keep it moist and make it easier to fold. I also used pecans because I prefer those to walnuts. And after I put the batter in the loaf pans, I sprinkled cinnamon sugar. The bread came out beautiful - brown and crispy on the outside and soft and moist on the inside. I loved it and it's my new "regular" bread for my kids' snacks and gifts for the neighbors!

Turkey Brine

This was unbeatable and so easy!!! I thought it was kind of wasteful and excessive to use that much broth for a brine, so I just used water instead. I also forgot to boil the spices into the brine (broth), but it still came out sooo juicy and delicious. I bet boiling before placing the chicken (turkey) in the brine would make it more flavorful, but if you don't have time it works very well without doing that as well. This could very well go on our weekly family menu! :-)

Marinated Turkey Breast

Indonesian Pork Tenderloin

This was good. I've never had Indonesian food and I couldn't decide if I liked it or not. But the rest of my family really enjoyed it - and I have 4 picky kids, it's hard to please them all. And it was very EASY and quick, and very tender meat. I will be making it on the grill next time, I was just too tired last night!

Golden Pork Chops

I make this recipe all the time - well something a little more simple and we've been eating it for years. My entire family loves it. I use 1 can cream of mushroom soup with roasted garlic, one can of milk, salt & pepper and Italian Seasoning. I bake it at 350 for about an hour to get it really bubbly. Soooo simple!! The onion and mushrooms sound good in there too - but it's a little more time and there are some mushrooms in the soup. Point is - either way is delicious and my way is good in a pinch and their way is good if you want a little more flavor and have a little more time.
