Baked Salmon II

Reviewed: Feb. 21, 2003
I would like to give this one at least 6 stars. It was very good. I did decrease the olive oil to 1 (one) tablespoon and decreased the salt to 1/2 teaspoon and I can not imagine it tasting any better. I marinated it in a plastic bag and kind of massaged the oil mixture into the salmon and then left it for an hour. I may decrease the pepper a wee bit next time. For you fellow Weight Watchers I calculated the points for a 6 ounce fillet to be 8.5. ***That is the points using 1 tblsp. of oil for the 2 fillets. Enjoy! Thanks Norma.

Lentil Soup

Reviewed: Mar. 27, 2003
Very good. I did decrease the oil to 1 tblsp. and added about 1/2 tsp. cumin. It made about 10 cups of soup. Weight Watchers: (with 1 tblsp. oil) this works out to be 2.5 points per cup in my calculations.

Prime Rib Roast

Reviewed: Dec. 1, 2002
This is an excellent recipe! I was a bit afraid of ruining an expensive cut of meat. Not a chance--everyone loved it. It was still rare at 2 hours, so gave it another 1/2 hour--tender, juicy and still some rare for those that like rare and medium to medium well for others. We will be having this one again! Thanks so much.

Slow Cooker Baked Beans

Reviewed: Oct. 12, 2002
This is a very nice tasting recipe, but did require several hours more cooking for nice soft beans. Next time I will soak the beans overnight as I have with other recipes. I used ham pieces rather than the ham hocks and that worked well. I used only 16 oz. of dried beans and the same amount of sauce in the recipe. AND the beans taste even better the next day. Thank you for the recipe--will make again.

Vegan Black Bean Soup

Reviewed: Apr. 26, 2003
This is very good! I ran out of chili powder, so used a bit less than 1 tblsp. so also went a bit less on the cumin in an attempt to maintain the balance of flavors. Consequently I thought it needed a bit more spice, but my husband thought it was spicy enough. We will definitely be eating this again (likely with a bit more spice). Weight Watchers--4 points per cup is the way it worked out for me.

Mexicali Pork Chops

Reviewed: Jul. 9, 2003
I thought this was great. I also added a cup of black beans as one reviewer suggested. It does need spice, so added garlic, salt, pepper and chili powder to the veg. mixture and put the chili directly on the chops-yummy. I would be happy with the mixture over the rice as a meatless meal. Weight Watcher friendly, points depend on size of chop.

Creamy Chicken

Reviewed: Mar. 22, 2003
I enjoyed this dish and gave it 5 stars for tasting very good with only 3 ingredients. I did add fresh mushrooms (sliced them thick and used them as a cushion under the chicken). Before adding the soup I removed about 1/4 cup of juice from the mushrooms. I covered for the first part and then removed after the soup was added. I will def. make again--a nice, simple comfort food. Weight Watchers--5 points and gravy!

Banana Prune Muffins

Reviewed: Feb. 22, 2003
These are very good--moist and flavourful. I will def. make again, may try dates instead of prunes but the prunes were fine. Forgot to share the Weight Watcher points! 4 points per muffin. Thanks Lisa.

Marian's Creamed Corn

Reviewed: Nov. 9, 2002
Very, very good---def. a keeper. I did not have any bread crumbs, so used Ritz cracker crumbs and they tasted great. I plan to make this for a family supper over the Christmas holidays. Can't wait!

Barbecued Pork Chops

Reviewed: Mar. 24, 2003
This recipe gives an unusual but nice flavour to the pork chops. I am not overly fond of nutmeg, but glad I didn't cut it down because it added a nice aroma and taste. I did add an onion sliced in large pieces and some pepper. I will make this again--Thanks.

1-2-3 Vegetable Chili

Reviewed: Feb. 12, 2004
For the ease of preparation this would be a 5 star. It is very good even aside from that but I did make a few changes. I added a can of kidney beans and a can of baked beans in tomato sauce. I also added a small can of crushed pineapple. My crew found it too spicy. Guess I will have to go for mild salsa next time---is there such a thing!! I will make it again sometime when time is short and I don't feel like cooking.

Groovie Smoothie

Reviewed: Jul. 1, 2003
This is so good it is almost sinful!! I used frozen blueberries instead of strawberries, but when I have strawberries I will also try those. My husband does not like blueberries or yogurt and had 2 glasses--what he doesn't know won't hurt him I guess! Thanks for the recipe.

Cream Cheese Squares

Reviewed: Aug. 8, 2003
OK, this is a 6 point recipe! WOOHOO!! I have been baking today to take slices to a wedding buffet. I am dieting and this is the ONE that I decided I would taste and I think I made a very good choice. Now I have to get it into the freezer before I get back at it. Try it, it is well worth the minimal effort it requires.

Cheese Ball I

This recipe was quite good. I thought the taste improved the second day. I thought it had a salty taste and would decrease the amount of ranch dressing somewhat.

Spicy Honey Mustard Pork Roast

This is a keeper! Very tasty, but did cut back on the pepper considerably. Glad to have enough left for sandwiches tomorrow. Accompanied the roast with the herbed roasted vegetables on this site. Great combination. Thanks for the recipe.

Ham and Cheese Omelet Casserole

We enjoyed this for Christmas brunch. I did make a few small changes---bacon instead of ham, a mixture of old cheddar and swiss cheese and I included a few green onions. It was very tasty.

Peanut Butter Cake II

Reviewed: Jun. 15, 2000
This cake is very tasty. The icing is very peanut buttery tasting and VERY rich. I would make a little less icing next time. I put strawberry jam between the layers which we thought added a nice taste. I will make it again. Thanks for the recipe.

Karrie's Yorkshire Pudding

Reviewed: Dec. 13, 2003
I used drippings from the roast instead of shortening. It puffed up and browned nicely and tasted good. I do prefer the individual puddings in the muffin tin, but this is a lot less effort and WAY less mess on the tins and oven. I will make this one again.

Tropical Chicken I

Reviewed: Feb. 11, 2004
This is fast, easy and tasty to boot. We all enjoyed it, but the sauce would never have been enough for 10. I think it would need to be doubled, it was just right for 4. It is, of course, not spicy--just pineapple-ey and good!
