Mexican Pork Chops

Reviewed: Apr. 7, 2004
This was quite good, but did make a few changes. I used salsa instead of tomatoes to add a bit of zip. I salted and peppered the chops in the pan and added sliced onions. I didn't have chilies so added chili powder and about 1/2 cup of water. I found that it took about 45 minutes with the lid on for the rice to get soft. We all enjoyed it and will likely have it again. Thanks for the recipe!

Baked Omelet Roll

Reviewed: Mar. 21, 2004
I hesitate to rate it because I did change it bit. I used 8 eggs, no flour and added onions and red peppers. Got a thumbs up here. I don't believe it is as puffy as perhaps would be with the flour (from reviews), but it was flavourful. I sprayed with Pam and it did not stick at all.

German Chicken

Reviewed: Mar. 4, 2004
The chicken breasts were lovely and moist. I did not enjoy the combination of the sauerkraut and BBQ sauce. I do like sauerkraut, just wasn't my thing.

Easy Peach Crisp I

Reviewed: Feb. 22, 2004
This is very good. Thanks to the reviewers suggestions I decreased the sugar by half and used light peaches. It was certainly sweet enough. I used the butter pecan cake mix, brown sugar and added a dash of vanilla to the peaches. We all enjoyed it hot out of the oven topped with vanilla ice cream.

1-2-3 Vegetable Chili

Reviewed: Feb. 12, 2004
For the ease of preparation this would be a 5 star. It is very good even aside from that but I did make a few changes. I added a can of kidney beans and a can of baked beans in tomato sauce. I also added a small can of crushed pineapple. My crew found it too spicy. Guess I will have to go for mild salsa next time---is there such a thing!! I will make it again sometime when time is short and I don't feel like cooking.

Tropical Chicken I

Reviewed: Feb. 11, 2004
This is fast, easy and tasty to boot. We all enjoyed it, but the sauce would never have been enough for 10. I think it would need to be doubled, it was just right for 4. It is, of course, not spicy--just pineapple-ey and good!

Gramma Brown's Corn Chowder

Reviewed: Feb. 8, 2004
Excellent corn chowder. I suggest stir-frying the onion, celery in the margarine while the bacon is cooking and then adding the chopped vegetables, broth and bacon to it. I prefer to fry the bacon and then let it cool on a paper towel to get rid of as much fat as possible. This is a soup that we will be having again. Thank you for the recipe, Halle.

Bean Soup

Reviewed: Jan. 29, 2004
Yowzie, this is a keeper! I made it almost exactly as the recipe states except that I added everything to the beans at the same time. I am hanging my head in shame, but I had thrown out the ham bone before I decided to make this. The ham itself gave it lots of flavour though. I had not presoaked the beans overnight so I did the quick soak thing. They did not soften enough, so I simmered the soup all evening (adding a few cups of chicken broth) and then we had it for dinner tonight. Worth the wait. Thank you!

Slow-Cooker Pepper Steak

Reviewed: Jan. 27, 2004
I am not sure what it was about it, but had a weird flavour that neither my husband nor I liked. My son liked it. It did need more corn starch and I did put the peppers and mushrooms in about an hour before we ate. I will not be making this one again, but seems like it was me according to the other reviews!

Slow Cooker Cranberry Pork

Reviewed: Jan. 19, 2004
This is really quite good! It does, however, need a friendly dose of salt and pepper! I thickened the sauce and poured it back over the chops (forgot to take the roast out of the freezer). The chops were tender and moist. I made this again with a loin roast and it is better with the roast as per recipe. Don't forget the salt and pepper.

Baked Spaghetti Corn

Reviewed: Jan. 18, 2004
An interesting concoction. My husband and I both thought it was ok, but it needs lots of pepper and some salt. My son, on the other hand, thought it was awesome. If he asks for it I may make it again, otherwise, it will not likely be a repeater.

Karrie's Yorkshire Pudding

Reviewed: Dec. 13, 2003
I used drippings from the roast instead of shortening. It puffed up and browned nicely and tasted good. I do prefer the individual puddings in the muffin tin, but this is a lot less effort and WAY less mess on the tins and oven. I will make this one again.

Minestrone Soup I

Reviewed: Dec. 8, 2003
This is a keeper! This family really likes soup and this is right up there with our favorites. I did have to make a few changes due to what I had available in the pantry. I used vegetable stock instead of chicken, kidney beans and green beans instead of cannellini and cabbage and a bit of basil for good measure. Try it today!

Apple Maple Crumble Pie

Reviewed: Nov. 2, 2003
This is a very good apple crisp. The maple syrup adds a nice touch. It is very sweet, but there was not a single complaint from this sweet loving group! This one will be made again. Thanks, Helene!

Black Bean Vegetable Soup

Reviewed: Oct. 23, 2003
This is a very good soup, easy and quick. Blending the beans and tomatoes made the juice in the soup very rich tasting and worth the small effort. I am so happy to have leftovers tomorrow. Friday night and supper is already prepared, who could ask for more. Thanks DeeDee.

Grandma's Slow Cooker Vegetarian Chili

Reviewed: Oct. 18, 2003
This is a very good basic vegetarian chili. I had to do some substituting because I didn't have everything in my pantry. I used salsa instead of tomatoes, black beans instead of soup and mixed beans instead of kidney. I did miss the kidney beans, but otherwise it was a winner. The salsa gave it a nice kick--a bit too much for 1 of the family, but that is not the fault of the recipe. I liked the nice crunch the veggies still had, but think 3 hours would not have hurt it at all and perhaps on low for several hours would work too. Great slow cooker recipe and very weight watcher friendly. Thanks!

Black Bean Chili

Reviewed: Sep. 24, 2003
I have made this a few times and we all enjoy it. I didn't add the jalapeno as some don't like it hot. We will continue to enjoy it often.

Baked Pork Chops II

Reviewed: Sep. 8, 2003
This was one of those days that I was running around like a chicken with my head cut off, making many mistakes---and it still turned out very good! I didn't have brown sugar, so used white. I forgot the lemon juice so put it in after the sugar mixture. I did add onions, garlic and celery seed as suggested in other reviews. It reminded me of a dish I used to make with cabbage, pork chops and tomato sauce. A tasty comfort food. Thanks Kate
