Extra-Easy Spinach Lasagna

Have to agree, this is a super lasagna recipe and a twist from the usual ground beef version. Took a double pan to a church dinner and got rave reviews from a very international crowd. Nothing to change. Just pure awesomeness!

Fish Tacos

Served this tonight to a crowd of 20 and there was not a crumb left. I thought people were going to drink the sauce left in the bowls, it is soooo good. Shortcut: used frozen fish sticks. Only other changes were to add a handful of cilantro to the sauce and used flour tortillas. This dish WILL be repeated... again and again. Thanks for a dynamite recipe!

Amish Cookies

Though this cookie looked pretty and held its shape through the baking process, I did not find the taste or texture likable. Perhaps it was the confectioner's sugar and oil as those were the things I tasted. After baking one batch I added 1/2 tsp of vanilla looking for flavor but that didn't remedy the blandness.

Grandmother's Buttermilk Cornbread

My advice, "Double it!" This is a recipe the kids will love! I doubled the batch, made one bread a bit smaller than the second and oh my, how beautiful was the larger (i.e. higher) one! The best part was the taste! Phenomenal! I like this recipe with or without the sugar depending on my mood. If you like yours sweet, go all the way with the sugar. If you don't like sweet cornbread, leave it out - you can't go wrong. Awesome either way! Funny story...only had grits last night and no cornmeal. Put it through the coffee grinder, substituted and out came the most delicious cornbread and no one had the slightest idea. I live in Spain where we make do with what we have. Delicious! I will look no further. I have found the perfect cornbread recipe! THANKS!

Grandma Snyder's Oatmeal Cake

I tried this recipe as written and found the cake way too sweet w/so sweet a topping. Another problem may have been that I used 1-minute oatmeal. With so much icing the cake came out soggy. In my opinion, if you have to tweak a recipe, I don't think it should receive 5 stars. If you tweak it, why not resubmit w/adjustments to make the recipe better?

Lemon Cream Pasta with Chicken

EXCELLENT!Didn't alter this recipe one bit. Made for 40 tonight and not a bite left and received RAVE reviews! Tons of flavor and EASY. OK, did change the method of cooking the chicken...boiled the chicken breasts for some homemade broth and added spices to the water. Almost a one dish meal! Be sure to undercook the pasta a bit if you are not serving right away or becomes too soft. Delicious!

Mom's Zucchini Bread

Have to agree w/the rest... awesome recipe and whoa! the reviews! I did use 3 cups of zucchini but was so moist I had to increase cooking time. Next time I will only use 2 and I imagine keep the cook time as written. THANKS for giving me a recipe to pass on for generations! It's a keeper.

Flaky Food Processor Pie Crust

This is the only way I make pie crusts. (BTW, I live in Spain and you cannot buy ready made pie crusts in the supermarket.)I never make a single recipe though. If you're going to make a mess, you might as well make it count...double or triple, wrap in plastic wrap and put in the freezer or fridge until you're ready to use. Thanks for a wonderful recipe! Love it.

Banana Cake VI

This is my absolute favorite cake and my favorite use for overripe bananas. I simply put them into a zip lock and toss them into the freezer until I have enough for this cake. BTW, my only adjustment to the recipe is to add an extra large banana and increase the baking time by about 30 minutes. This cake disappears fast and always gets crazy RAVE reviews! I live in Spain and we do not get Buttermilk so the first thing I do is to add 1 TBS of lemon juice per one cup of whole milk and let sit for at least 10 minutes or while I proceed with the recipe. Thanks CC for a dynamite recipe!

No-Fuss Cinnamon Cheesecake

If you can wait until this cools, this is the easiest and best of desserts. Rich and complex. No one can figure it out unless you tell them. One pan makes a lot. I doubled the recipe and had leftovers though everyone flipped over it. Very rich too. I've made it several times. A no-fail recipe for sure.
