Paleo Omelet Muffins

What an awesome idea! I love making omelettes but never once thought to try baking them in muffin cups. I'm not technically doing Paleo, just looking for healthier ideas and tips and this certainly qualifies. However, I had to add just a little feta cheese, herbs (you have to have tarragon with eggs), used chicken instead of ham as that's what I had on hand, and added some diced mushrooms. This is ultra versatile and you can use any omelette recipe and alter it for this baking technique. It's sort of like an omelette meets fritatta in a muffin cup.

Baked Cod with Boursin Herb Cheese

I'm not a huge fan of fish but I'm always trying new ways to work it into my diet. This is an excellent start but made as per the recipe was very bland. It needs work. This is a 2 for just as the recipe stands. I need to try this one a few more times and figure out how to make it taste better.

Chocolate Thumbprints II

This was a very easy and fun recipe to make. I love how the hugs retained their shapes until we moved them from the trays and then the hugs melted down into the thumbprint. The hugs were put in after the cookies came out if the oven and left to rest and goo-ify. Then we also used caramel kisses that were baked in the oven. They didn't melt down of course because the caramel retained the kiss shape but both methods were real good. We rolled the hugs in sugar in the raw and the caramel kisses in chopped walnuts and left off the egg whites. The only reason this doesn't have 5 stars is that I think the flavor was just a teensy bit off. Still real good and I'll be making these many times over now. I'll have to see if adding cinnamon, or ginger or something else will help. If I figure out how to make these really pop I will try to give an update. End result is this cookie is one all families should try at least once and then make it their own. Kids would love these! Thanks!

Homemade Buttercrunch Candy

My grandmother used to always make peanut brittle for Christmas. When she got too old to continue the tradition, my father took over. He passed away last year and I did not have the family brittle recipe to continue the tradition. This toffee is so wonderful. Without the chocolate it is so much like grandmas brittle. With the chocolate, it adds a personal twist as I LOVE chocolate. :) Thank you so much for helping me carry on our family's tradition! My mother says the base of this toffee tastes much better than grandmas brittle, which is quite a compliment as everyone anticipated grandmas brittle come Christmas. This is also really easy and my sister and I had so much fun making this, carrying on the tradition. I'll have to share this recipe with my cousins so they'll be able to carry the tradition too. Imagine the very yummiest peanut brittle ever (or cashew which is waft I used), now add melted Guittard milk chocolate over it. Delish! Guittard is more expensive than Tollhouse morsels but the chocolate flavor is much more intense. Even my husband who is not a big toffee or brittle fan loved this!

Baked Spaghetti Squash Lasagna Style

I've tried many sketti squash recipes but this one is by far the best. I sautéed the onion and garlic together with some green chilies to add a kick and I did use the two cans of tomatoes but I drained them beforehand. Definitely cook the sauce until most of the liquid is gone. I also cooked the squash cut side up and liberally added spices and salt/pepper. Also cooked the squash a little extra to dry it out a bit more. Finally I added a mixture of ground lean beef and homemade chicken sausage. This was a wonderful meal! My husband is not a fan of squash but he really liked this.

Cucumber Crunch Salad

This is a great recipe but there's way too much water. I cut down the water by a half cup and honestly it still was too much water. My husband and I both love vinegar so next time I'll try 3/4 cup vinegar and half a cup of water. However, this is just like Dad used to make when we were little. Thanks for sharing this recipe!

Chocolate Mousse Cake IV

This was a great recipe! I made this for the triple chocolate cake I made for my husband's birthday (he likes chocolate). Whilst it did take some time and you MUST refrigerate it before mixing in the cream, this makes an awesome frosting. This was in the top 3 of my husband's favorite frostings I've made for him. Definitely recommend!

Lower-Fat Coleslaw

I followed this recipe but added 2 tablespoons of dill relish (will add more next time) and used a store bought bag of broccoli slaw instead of cabbage. This was great and even my husband liked it. I think some celery seed might make it pop. This is a great base recipe to experiment on and customize.
