Best Ever Beef Stew

This is a great basic stew recipe. I use a can of tomato soup instead of tomato juice and coat the beef in flour when browning. I also used just water instead of broth but I think it's a great idea. The flour then acts as a thickener for those who like a more stewy stew rather than a soupy stew. Great with some fresh or sour dough bread.

Chef John's Minestrone Soup

The whole thing about minestrone is being able to modify the ingredients to what you have on hand or what you prefer, but the base of this recipe is spot on. Some additions to try in addition or instead of what's in the recipe are kidney (cannelloni beans) or navy beans, diced zucchini, crumbled Italian sausage, kitchen cut green beans. Overall my whole family enjoyed this and it will stay in my Allrecipe file!

Cranberry Pumpkin Muffins

This is a very good muffin recipe. I was hesitant to try it because cranberries and pumpkin didn't seem to "go" But I was pleasantly surprised that they go just fine. Lovely pumpkin to spice ratio with an occasional tang of cranberry. Just yummy. Give this a try.

Chef John's Homemade Chicken Stock

Nothing beats a homemade stock. If you are using this for soup, add 1-2 bone in breasts for meat. Follow the rest the same. When the stock is finished chunk up the breast meat, add cooked diced celery and carrot, and small pasta like acini di pepi or thin egg noodles.

Chef John's City Chicken

A northeastern ohio/ western PA classic! I remember asking a butcher in NC for city chicken and he looked at me like I was crazy. This is exactly how we make city chicken. Sometimes we serve with a package of chicken gravy but usually not. Just yum... If you aren't familiar with this dish give it a try.

Bowties and Broccoli

My family has been making this for years. It's a fresh and simple side dish or lunch item. Those looking for a complex meal this is not it at all and is obvious by the ingredient list. It's not helpful to say this is bland or no flavor when clearly it's not meant to be something more than it is. If you like more flavor then add them. I've add red pepper flakes, black pepper, or a sprinkle of Italian dressing times for something different but mostly I love it as is.

Baked Orange Roughy Italian-Style

This was a yummy way to serve this fish. I remember my mom baking roughy with only butter and was about to do the same but decided to make this instead.it was so quick to mix up he ingredients. Only change I made was pressing the mixture on top of each fillet and then put a small dab of butter on top. Was yummy and is now in my favorites list.

Peanut Butter Snack Bars

This was delicious and definitely a recipe keeper. My son eats through granola bars like you wouldn't believe and now I can control the processed food and sugar by making them myself. Only made minor changes because I didn't have rice cereal so I doubled the flakes. Added sunflower seeds and used natural peanut butter. May try to reduce the brown sugar by half next time because they are sweet for my taste but not a huge deal breaker. Agree with the previous review to only boil for about 2 minutes.
