Healthier Mom's Zucchini Bread

Great flavorful bread! My family of seven loved this recipe, and here are my changes: I used 1/2 cup melted butter instead of the oil and lowered the sugar to 1 cup. I also added 1 cup of applesauce. It turned out perfect. The butter added the butter flavor and I felt I didn't need to cover the bread in butter before eating. We actually ate it warm out of the oven with a scoop of vanilla ice cream on top. Delicious!

Neat Sloppy Joes

I make this exactly as written, except I use real garlic instead of the powder. I FINELY chop the celery and the onion, and the kids don't even notice that it's there. This is the only way I'll make sloppy joes now, and I love knowing my family is getting the extra nutrition with the added veggies. Sometimes I throw in some finely chopped green pepper as well. Thanks for the great recipe!

Yam Casserole

Actually got my family to eat sweet potatoes! Very delicious recipe! I thought it was a little too sweet, so next time I will not add the white sugar, and a little less brown sugar. I didn't have any corn flakes, so I substituted flour, and it still turned out wonderful.

Baked French Fries I

My family really enjoyed these fries. Because I didn't have enough time to cut potatoes, I dumped a bag of frozen cubed potatoes into a Zip lock bag and added the other ingredients and baked at about 400 degrees. Because the potatoes were small, they were done in a little over a half hour, and I turned them twice. We liked them so much, that I am making them again tonight, but I did cut up the potatoes tonight, so we will see how I like tonight's version!

Brown Sugar Meatloaf
