Pizza Without the Red Sauce

So good! I used tastefully simple brand Dried Tomato and Garlic Pesto Mix for the base so that took the place of the butter, minced garlic, basil and oregano. And who knew feta would be so delicious on pizza?! Will become a regular pizza option for us.

Zucchini Crustless Quiche

Delicious. I used 1/2 flour, 3 eggs and substituted the other 2 eggs with egg beaters. I also shredded the zucchini and blotted out some of the liquid and totally skipped the food processing step. Left in the oven about 50 minutes. It was yummy!

Eclair Cake

YUM. So good and easy! Since I needed it in less than 4 hours, I took another suggestion and dipped the graham crackers in milk before layering. I used reduced fat and sugar ingredients and it was still good. Also topped with reduced sugar frosting that had been microwaved. Will make again.

Baked Zucchini Chips

These were good. But I did add a lot of seasoning. I admit that I did not have seasoned bread crumbs so I added Italian seasoning, garlic powder, onion powder and cayenne pepper. They all got eaten so I'll make them again.

Fabulous Orange Cake

The taste was great. Only substitution that I made was to use orange juice instead of liqueur and the zest of one orange. But I think all of my white chocolate chips sank to the bottom and melted there. Like I said, it tasted good but looked kinda weird and the melted chips made it seem like it was not done even after the hour cook time.

Chicken Noodle Casserole I

I used lower fat everything and whole wheat egg noodles and this still turned out quite good. Probably due to the reduced fat it was slightly bland even when I tried to spice it up with some garlic salt. I will definitely try again and probably add some sauteed onion and garlic. But it is a great comfort food recipe for a cold winter night. For weight watchers out there, even with the reduced fat, it's about 9-10 points per serving.

Creamy Chicken and Wild Rice Soup

Excellent, perfect for a winter day. We happened to get snowed in with no fresh veggies and we were craving soup so I stumbled upon this recipe and it fit the bill perfectly. I did add some chopped onion and used skim milk instead of the cream. It was still really good!

Best Peanut Butter Cookies Ever

These are great cookies but they weren't exactly what I was looking for. I did use half brown sugar and half white which I think added to the flavor I was going for. But the texture, while good wasn't like I remember from the PB cookies of my youth. I did like the intense PB flavor from these and the softness. I will make these again but will try a recipe with flour to see if that is what I am missing.

Polenta with Spicy Sausage-Veggie Sauce

to say that i am a novice cook is generous. but im getting there. :) ive been wanting to try polenta and when i stumbled on this recipe, i figured it may be a good start. this was SO good. i used hot italian turkey sausage and green squash since thats what i could find. i loved it and my boyfriend loved it. a definate keeper. i did feel like there was more sauce in relation to the polenta.

Chess Cake

This cake is sooo rich but it is really good. I have a crazy sweet tooth and even I questioned if it was too sweet. I only did about 3 and 1/2 cups of sugar and it turned out fine. My oven cooks uneven and it seemed like one side was more done than the other and I preferred the "crispier" side, so I will probably cook it just a little longer next time. Also, I used 1/3 less fat cream cheese. All in all a good recipe that can be prepared quickly and feed a lot.

Lemon Square Bars

My first attempt at lemon bars and they turned out great. I followed some reviews and did the following: added lemon zest to the crust, baked crust at 315 for 15 minutes and baked the whole thing at a little less than 350 for only about 28 minutes (the top browned quickly so keep an eye on it.) Everyone who tried these loved them. Next time I think I'll try it with limes.

Chili Pizza

if i can do it, it's easy! and it was delicious! my boyfriend ate 3 slices! it's worth the calories but reduced fat cheese and tortillas may help if that is a concern.
