Black Bean Hummus

This is the best homemade hummus. I put all ingredients in the Vitmix, except the tahini and much less salt than is called for. I misread the directions and included the olives in the Vitamix and it turned out amazing!

Tomato, Basil, and Feta Salad

Great recipe. Wonderful flavors. I slice and salt tomatoes then allow to drain on paper towels before chopping. Mix everything, let the flavors marinate in the fridge and add the feta just prior to serving.

Baked Kale Chips

Gazpacho

Great recipe. Prepared it in the Vitamixer. Left out the tarragon and parsley. Used fresh basil and heirloom tomatoes. Sauteed the onion and garlic for a bit in olive oil before adding it to the Vitamix to take out the sharpness.

Easy Tuna Casserole

Liked it. Used cream of mushroom soup instead of chicken. Sauteed onion and celery first, then mixed it into the casserole. Can use any kind of pasta.

Marinated Wild Salmon

Great recipe. Tastes awsome on the grill. The only thing i left out was the cilantro and it was still delicious! I always use this marinade for salmon now when bbq'ing.

Yummy! Served this at a party and everyone couldn't stop eating it..it was a definite hit! Recipe is great as is. Adding a package of vanilla pudding mix gives it a nice color and flavor as well.

Tofu and Cheese Stuffed Shells

Loved this one! Absolute fav.. Delicious! I skipped the carrots and added mushrooms instead. Sauted the veggies in olive oil and a bit of butter. Used additional mozzerella instead of monterey cheese. Followed the advice of others and added oregno, basil, garlic powder to the tofu mixture. Used prepared Whole Foods pasta sauce. Have served this to many people...vegetarians and meat eaters and all have enjoyed!

Grandma's Slow Cooker Vegetarian Chili

This is a delicious veggie chili! Definitely my favorite. Being vegetarian, I did as someone else suggested and used Amy's organic, vegetarian black bean soup This is a hearty chili that even my meat-eating husband enjoys. Thank you so much for sharing this recipe!

Spicy Slow Cooker Black Bean Soup

I enjoyed this recipe very much. I followed the advise from some of the other reviewers and added a can of diced tomatoes, chopped onions, and minced garlic. I used canned black beans and vegetable broth. Cooked on high for about 1 1/2 hours and low for about 2 hours. This is something I will be making again and again. Thanks!
