Chef John's Caramel Chicken

WOW. Made this on a whim using what we had on hand- bone-in thighs and no cilantro or green onions, which I am really looking forward to trying next time. We also had to do without the jalapenos as my two sons are totally heat-phobic... it was still SO good! I can't wait to make this again for the grownups, the right way, and maybe with some red thai chile simmering in the sauce as well!

Best Chocolate Chip Cookies

I've found my go to recipe, with minor changes- I did 1/2 c white sugar and 1 1/2 c brown sugar, plus I doubled the vanilla. I weighed the flour to make sure it was the right amount (3 cups=13.5 oz). Said my neighbor: I don't usually like chocolate chip cookies, but there's obviously something good in the way you did these!

Honey Wheat Bread II

A winner! I am thrilled to find something I can replace for buying bread at the store every week. It can be tough to find a good bread recipe that doesn't require a machine. I used bread flour for this, and followed it otherwise to a t. I will be making this recipe on a regular basis.

Cracked Sugar Cookies I

So yummy and easy! I made these with my three year old and he had a great time putting sprinkles on, both before and after baking. They are very tasty and came out just as close to perfect as we could have hoped.

Sausage and Egg Casserole

Yummy and easy- my husband loved this so much he wishes he had an extra stomach. I made a couple of changes- instead of the dry mustard, I added about a quarter cup of maple syrup to the milk/eggs mixture for a little sweetness, and I threw in some thyme and sage. I also added some mushrooms I had on hand. Yum! Will make this again for sure.

Champagne Shrimp and Pasta

Delicious! I cut this in half to make a special dinner for two, and I used scallops instead of shrimp. I also subbed basil for the parsley, I just had some on hand. I will definitely make this again, next time I will try it with the shrimp, and it would be great with tender strips of chicken too. I may experiment with using a little garlic, just to see how that tastes, but the recipe is great without it too.

Vegetable Lasagna

Delicious recipe- don't skip the red pepper, that really makes a nice difference. I made the mistake of omitting the onion salt, because I often find recipes too salty, but I ended up wishing I had put it in. This will serve more than two by the way.

Jen's Fresh and Spicy Salsa

So I used six tomatoes, I just needed to get rid of them. I added a very scant teaspoon- probably more like 3/4- and found this too salty. It was very cilantro-tastic, though, which I LOVE. It's also reeeeally spicy with just the two jalapenos- I omitted the hot pepper sauce and still, Dang. I will make this again and just use less salt.

Tomatillo Guacamole

Wow! Never made guacamole before, but my husband loves it... this was a hit. I added two serrano peppers in place of pepper flakes and hot sauce, which made it pretty spicy. I also added a good bit of cilantro, and I just blended it all up in the food processor. Good creamy consistency, great flavor! Will make again!

I had a tough time with this recipe. Although the flavor was good, all the pancakes were either burned or undercooked, and a few were both. Overall, too frustrating for me to make again.

Beer Batter Fish Fillets

I didn't think I'd be able to pull this off, but I did! I increased the flour and let it sit for a half hour. I also threw in some onion rings, just for fun, and they turned out great. I think next time I will add more spice, but overall this turned out great!
