Roasted Potatoes with Greens

All I can say is "WOW!" I was some what skeptical as to how the spinach would work with this meal so I did not add too much of it. The spinach was definitely a delight to the meal. Next time I won't be so scared and will probably ending up using more than the meal called for. I also used 3 TBSP of butter vs. the 2 TBSP the recipe called for. I also used Tony Chacheras (sp) seasoning instead of salt and pepper. But My daughter and I both LOVED this side dish! I would highly recommend this to dish to anyone. This is a great way to combine your starch with some "green" vegetables.

Awesome meal. I would probably add a little add about a 1/2 lb. more meat the next time but still an awsome meal. Quick and recession friendly.

Crustless Spinach Quiche

This was REALLY good! I followed the recipe with the exception of the cheese. Could not find it in the store so I used cheddar. Never had a crustless spinach. Really good low carb meal.

Green Salad with Cranberry Vinaigrette

This was AWESOME! My 13 year-old was not a fan but I loved it. My cousin made this over the weekend and I just had to have it again. I will definitely be keeping this easy meal handy. Especially on the days I don't feel like eat meat. Thanks!

Slow Cooker Sweet Potato Casserole

Awesome, awesome, awesome!!! I followed the recipe to a "T" and can tell you that the dish is AWESOME!!! I refrigerated some of it and still ate it cold. I will definitely be making this recipe again!!!

Baked Dijon Salmon

I will have to say this recipe deserved a triple WOW!!! My niece, who doesn't like ANYTHING actually liked this dish. My daughter and I truly enjoyed this recipe and I can guarantee that we will be making it again. I did substitute the dijon mustard for honey dijon. Also, I did not put a lot of bread crumbs on the salmon. Just a few crumbles on each piece. With the extra honey sauce I poured that back over the area where the bread crumbs were sprinkled. My daughter and I were both leery on what this would taste like because neither one of us are mustard fans. But this meal was AWESOME and something she and I will both consider a family favorite!

Actually Delicious Turkey Burgers

I thought this recipe was AWESOME! I think it should be renamed to AWESOMELY Delicious Turkey Burgers. It was PERFECT! I will definitely make these again. My 11 year old daughter loved them as well. As a matter of fact, she just came in my room and said she is going to fix her another one to eat!

Cousin Cosmo's Greek Chicken

This recipe was EXCELLENT! Very easy to make. I did use chicken broth instead of the water and chicken bouillons. Also, in the future I will use more spinach. The amount the recipe calls for is not adequate. And I did not use the lemon juice due to the the unfavorable comments from others that tried this recipe. But again, this recipe was EXCELLENT!!! Highly recommended!!!

Sweet Spicy Wings

This was the first meal I made from this site and can tell you that this was EXCELLENT!!!! It was very easy to make. I did not have a grill and had to bake the chicken wings, but the meal was still DELICIOUS!!!! I do caution that this meal should not be made for children. My 10 year-old liked it but it was a little too spicy for her. Next time I make it I will make a separate batch for her with less hot sauce. Maybe a 1/2 cup for her vs. the 1 1/2 cup the recipe calls for. But again, this was EXCELLENT and I will definitely be making it again.

Fried Sweet Potatoes

I thought this recipe was very good. I thought it was going to be more like french fries. I actually made the turkey burgers to go with this. This was more carmelized than fried. Still a good meal and definitely something I would make again. I will probably do some modifications and see if I can get them more fried the next time around.

Shrimp Linguine

I thought this dish was really good. The only reason I did not give it a 5 is because the shrimp did not taste as seasoned as it could have been. I did alter the recipe slightly per a couple of other viewers recommendations. I cooked the shrimp in garlic and butter first but then also used 1/2 and 1/2 and corn starch to thicken the sauce. My 12 year old thought it was good. I could tell she didn't think it was a 5 based upon the fact she did not ask for a secoond plate!!! (LOL). But on the next go round, I will see what I can do to make the shrimp a little more tasty so I can get it to a 5.

Angel Hair Pasta with Shrimp and Basil

This recipe was very good! It was very easy to make. My 10 year old daughter did most of the work with this meal and she ABSOLUTELY loved it! I am not a tomato fan and will usually eat around anything that has tomato in it. But with this meal I was able to eat everything. A great meal and I would definitely make it again.
