Angel Hair with Feta and Sun-Dried Tomatoes

Ok, it was really dry. Not sure what happened. The flavors were great with the sauteed onions, garlic, olives, tomatoes. I did add extra olive oil, but the pasta was so dry.

Portobello Mushroom Sauce

Very, very good! Yes, it is sweet. I think I too will try a tawny port next time. We put the gravy over veal cutlets. There was enough gravy left to save for another meal. I only had 1 cup heavy cream, so I add about 1/3 cup sour cream. I plan to send this recipe to my girls to try.

Hearty Ham Casserole

We loved this casserole. I did customize the recipe. I used peas instead of corn. I used about 1 cup of onions instead of 1 tablespoon. I panfried the cubed potatoes with herbs de provence, 1 tablespoon of olive oil, and lots of pepper. I only had a ham steak on hand. So I took the ham and removed as much fat as I could, then I cubed it. We were lucky, this particular hamsteak was not too salty. Next time, I will try to follow the recipe with the correct ingredients, but this time was great and lots of leftovers to freeze.

Homemade Tomato Sauce II

I made this with a few changes. I added 1 can of tomato sauce, decreased water to 1 and 1/2 cups, used olive oil instead of vegetable oil, added 1 clove of minced garlic, added dried basil. When sauce had thickened I added homemade meatballs. I poured the sauce over cooked rigatoni pasta, topped with grated pecorino/romano cheese, topped cheese with 3 slices of mozzarella cheese and baked for 20 minutes in 350 degree oven. This was delicious.

Spinach Casserole

This was very good. Be sure cream cheese is completely softened. I did not totally squeeze out all of water from the spinach, I believe that kept it somewhat moist. Watch salt. I should have used low sodium soup. Recommend using better brand of ff onions.

Pork Chops in White Wine

We just finished eating this dish and I will make it again! Yummy! I followed DCGOURMET recommendation with just a few additional changes. I only had 4 rather thin pork chops (bone in). After slowly browning pork chops I sauteed 1/2 chopped onion and a few minced garlic. Then put this onion/garlic on top of chops. I mixed soup with Dry Vermouth, a dash of Worchestershire sauce and about 1/4 cup of sour cream and the teaspoon of Herbs de provence and ground crack pepper and no water and no jar of mushrooms. Just poured soup mix over chops and baked for 30 minutes in 350 degree oven. I was glad I only used about 8 oz. of vermouth, as it was strong flavor. I plan to try this again and use a slightly sweeter wine.

Slow Cooker Beef Stroganoff I

We just finished eating this dish. It was yummy. Followed JillyBean14 suggestions with few changes. We had 1/3 less fat cream cheese, no fresh mushrooms and dollup of lite sour cream. We will definitely make this one again.

Garlic Creamed Chicken

Just made this using most of the ingredients as a base. We only had 2 chicken breasts, fat-free can of cream of chicken soup and the lighter version of cream cheese. I added a bit more garlic, 1/2 the can of soup, and a tablespoon of Herbs de provence, and a little fresh cracked black pepper. I did not pre-cook the chicken. Pretty tasty. It was a little bit thick, but still able to mix in with the fettuccine. I had some Italian green beans on hand and added them for some color. I plan to make this again and maybe add the Italian seasoning packet. I should add that I cooked this in my Breville oven using the convection setting.
