My favorite things to cook
Mini-quiches - this happened as a mistake actually. We dropped the carton of eggs, and only 6 survived, but the ones that broke were salvageable, but needed to be used right away. I made little quiches in muffin cups, and they turned out to be a wicked way to start the day!
My cooking tragedies
My husband pokes fun at my famous apple crumble, which is now called apple tumble...after i dropped the gorgeous concoction of apples and sweet topping while taking it out of the oven...what a disaster!

Honey Baked Chicken II
Super easy to make and extremely tasty! Hubby and I enjoyed this with steamed garlic and his 'smashed' taters. I used cumin instead of curry powder (didn't have any!) and it was definitely a great substitute. WILL make again. Didn't chop the chicken into pieces though, I just cut through the breast portion and flattened it out a bit. I baked it in a round Pampered Chef baking stone and ladled the 'sauce' over top every 15-20 minutes or so. Absolutely a staple in our house now.

Great recipe! Was the first thing to disappear at our work holiday open house. I used very little mayo and mostly spreadable cream cheese (in the container). I forgot the green onion and it didn't even need it. I cut the fat off the bacon before cooking for less fat and more protein and also used kitchen scissors to cut versus crumble the bacon. I cut the tops and bottoms off my cherry tomatoes as they didn't stand up. BUT I used small muffin paper cups to hold them which made them easy to pick up and was a nice display. Try to find the largest cherry tomatoes you can find and grab the man in the house to help with the coring of them!

Chocolate Chip Cheese Ball
This was a hit at our recent department open house. I definately recommend serving with the Mr. Christie chocolate wafers vs. graham crackers. I let the cheese ball sit for 24 hours before rolling in the walnuts and the flavours came together perfectly. I would also suggest using a mix of milk and dark chocolate flakes instead of chocolate chips to make this a more 'spreadable' treat.
