Fruited Curry Chicken Salad

Reviewed: Jan. 13, 2009
I used left overs from a roasted chicken and it's absolutely delicious. The blend of flavors is perfect. I didn't have grapes and I didn't miss them but I'm sure it would be great with them too. I also left out the toasted pecans because I'm not a fan of nuts in my chicken salads. I will make this many times in the future.

Sausage Jalapeno Poppers

Reviewed: May 24, 2008
Outstanding! I have made these twice now and I should have made more both times. A couple suggestions...definitely precook the bacon before wrapping. I lay each slice out on a cookie sheet and bake in the oven at 400 for 6 minutes. I also add 3 sliced green onions and about 1/2 cup sharp cheddar cheese to the sausage mixture. I do put them on a rack when cooking and I also use convection baking. Delicious!

Cherry Tomato Salad

Reviewed: May 24, 2008
This a very refreshingly different and delicious recipe. Like other reviewers, I cut the olive oil in half and doubled the red wine vinegar. I made it about 8 hours ahead of time and kept it in the refrigerator. The flavors blended nicely by the time dinner was served. This will become a regular in my house.

Byrdhouse Marinated Tomatoes and Mushrooms

Reviewed: May 24, 2008
Excellent! I added about 2 Tablespoons of cider vinegar to the dressing which I definitely recommend. Fresh basil is also a must. I don't think it would be nearly as good with dried.

Caesar Salad Supreme

Reviewed: Nov. 8, 2008
A fabulous Caesar salad! It's restaurant quality and very easy to make. I reluctantly used the full amount of anchovies but I'm glad that I did. They add a nice depth of flavor and didn't make it taste fishy. I used store bought croutons which was fine but I will try the homemade ones next time.

Lentil Soup

Reviewed: Nov. 8, 2008
Delicious! I'm not a vegetarian but I have been trying to have a meatless dinner at least once a week. We really enjoyed this recipe. I used twice as much spinach but other than that didn't change a thing. I will make this again.

Baby BLT

Reviewed: Jan. 28, 2009
I love these! Next time I will use reduced sodium bacon because they were a little salty. I also added a half of a package of reduced fat cream cheese and a 1/4 cup of low fat sour cream. As someone else suggested, I cut the bottoms off so they didn't roll around and it worked perfectly. Very much worth the time it took to make them. They were a big hit at the party I took them to.

Amish Macaroni Salad

Reviewed: Jan. 28, 2009
This is the best macaroni salad ever! I only used 1/4 cup of suger but didn't change anything else. Love it! Update- I've made this many times and people ask for the recipe every time. Since my first review, I have cut the sugar back even more to 2 Tablespoons and it's the perfect amount.

Brisket with BBQ Sauce

Reviewed: Aug. 2, 2009
FANTASTIC! Not normal for me but, I followed this recipe exactly and it turned out excellent. Other reviewers were unsure whether they were supposed to cook the brisket still wrapped in the foil. I took it out of the foil before putting it in the pan and just covered the pan with foil and it turned out perfect. I highly recommend this recipe. Its so easy and extremely tender and delicious! Everyone loved it.

Gourmet Mushroom Risotto

Reviewed: Aug. 2, 2009
I love risotto and this is one of my favorite risotto recipes. All risotto is time comsuming but well worth the effort. You could easily cut back on the mushrooms because the recipe calls for a lot. I have done it both ways with the full amount and half the amount when I didn't have quite enough and both ways were delicious. Try it...you'll like it. :-)

I made these for a party last night and everyone was raving about them. I used crimini mushrooms instead of white mushrooms and they were perfect. I also diced up some bacon and cooked it crisp and mixed it into the filling mixture. Delicious!

Sarah's Applesauce

This is the perfect recipe to use up a bunch of apples before they go bad. It's delicious. I used half the sugar and it was plenty. Especially good after its cooled in the refrigerator overnight.
