Indonesian Satay

Excellent recipe, enjoyed it very much and highly recommend it. My only advice is to increase the amount of marination and leave it for a longer time than the 15 minutes mentioned in the recipe. I left mine about 3 hours and it didn't darken the meat. I also marinated some carrots and mushrooms with the chicken and used it in the skewers. I used sesame oil instead of peanut oil (I didn't have any) and it worked just fine. I used the sesame oil in the preparation of the satay sauce also.

French Leek and Ham Shepherd's Pie

As I can't eat ham (for religious reasons) I used a mixture of beef mince and hot dog instead, and the results were superb. The only other tweak I did was adding a table spoon of tomato paste to the meats / leak mixtures. I loved it!

Firecracker Grilled Alaska Salmon

Tried this with a friend of mine and we both enjoyed it a lot. I didn't have peanut oil so I used a Canola oil instead. The nutty strong flavor of the sesame oil probably made up a little for the absence of the peanut oil. I also used the marination to create a nice sauce (which I used as a dip for the roasted veggies I made on the side), simply dissolve one teaspoon of starch in a half cup of water and add it to the marination and let them simmer over medium heat for few minutes. Delicious !
