Microwave Oven Peanut Brittle

SUPER easy. Don't forgo the glass bowl mentioned above. I used a plastic one the second time I made these and ruined the brittle and the bowl. Can also use a ceramic bowl which is what I used.

Creamy Hollandaise Sauce

Delicious - and really easy. I put the yolk mixture in my double boiler before it got hot like other reviews said and it worked out great!

Honey-Peanut Butter Cookies

Yum! Soft and chewy! Coworker told me it was like a cookie from a bakery. Unlike most cookies - they were still soft the next day. I increased the peanut butter by half a cup and reduced the honey by half. Used brown sugar and wheat flour. I also added about a tsp of vanilla. The batter turned out pretty dry and greasy - but turned out fine when cooked (I think all PB cookies are greasy before cooking...) next time I may add more peanut butter or honey for moisture so the cookies crumble a little less.

Baked Zucchini Chips

SO good! I love zucchini but have a hard time cooking it without making it mushy. These were crisp and tasty! I also added onion powder and doubled the Parmesan. I threw them into the broiler for the last two minutes for a little extra crisp. Slice them thin because the thicker ones end up soggy.

Eileen's Spicy Gingerbread Men

These were really good! I didn't have high expectations as the dough smelled kind of gross (I think it was the molasses) but they turned out great! I did have some difficulties rolling the dough out as it was a bit crumbly. I used butter instead of margarine, plus I subsituted brown sugar for white as some other people mentioned, I also used whole wheat flour.

Absolutely Ultimate Potato Soup

So so so good. I cannot begin to describe how good this soup was. Suprisingly though, it did not reheat very well at all. Next time I will cut the recipe in half as to not have so many leftovers.

Beth's Spicy Oatmeal Raisin Cookies

Oh My! My biggest pet peeve about Oatmeal Raisin Cookies is that there's not enough oatmeal, but this recipe was perfect. I actually replaced a third of the flour with finely ground oatmeal, and it worked out great!
