Bachelor's Creamy Pumpkin Soup
This soup was so easy and delicious... I took the advice of some reviewers and added 1/2 tsp cinnamon (1 tsp seemed like a lot), 2 tbsp brown sugar. I also omitted the butter and used half-and-half instead of the cream to make it a bit lighter but not sacrifice taste. My husband loves it!

Creole Mexican Catfish
Easy and yummy, and my husband loved it. I was uncertain about the tomatoes, especially after I added them, but he loved the whole dish. I will probably try it again but leave the tomatoes off. I used only 1/4 tsp ceyenne pepper, poured the butter over the dish, and cooked it for less time... maybe 20-25 mins?

Curried Chicken with Mango Rice
Not impressed with the recipe as it stands, but if I had taken the time to read other reviews I would have added more ingredients and browned the chicken. My husband enjoyed the dish, but I felt it needed more flavor. Also, about 1/2 of our rice was crunchy - needed more water and occasional stirring, but this could be due to our old pot lids!
