Snapper Veracruz

Love it. Full of flavour, so healthy, so quick and easy to prepare. Excellent weeknight meal with some healthful brown rice. I used fresh tomatoes instead of canned tomatoes, and fresh jalapeno peppers instead of bottled chili peppers. Does not make it as saucy, but it is still quite juicy and full of fresh flavour from the combination of capers, olives, lime juice and spicy jalapenos. It is now on my rotating repetoire of evening meals.

Coriander Tabbouleh Salad with Shrimp

What I like most about this recipe is the unusual addition of shrimp to the salad. This is the first time I have seen shrimp in a tabbouleh salad, and I found it a fresh addition. It provided another layer of texture as shrimp as a "to the bite" feel to it. While parsley plays a big role in this salad, I am not a huge fan of it, and as such that element was not my favourite part. Overall, I did enjoy this recipe, but I did note that its a salad that needs to be consumed within a day or two as the bulgar tends to take on a goopy consistency when it marinates with the other ingredients for too long.

Indiana-Style Fried Cabbage

Disappointed it did not turn out the way I had expected based on the previous rave reviews. I found it much too wet and the mushrooms, onions, peppers should have been cooked beforehand so that it would not have "boiled" in liquids. However, I did like the smoky flavour imparted from the bacon which made the dish rich and satisfying. I ended up throwing some cooked rice into the pan in order to soak up the excess liquid. Overall, I thought it was a good homecooking-type dish.

Florns' Chinese Steamed Fish

Another healthful Chinese dish. I liked the liquids imparted from cooking of the tomatoes, fish and soy sauce. It was a good way to mix it up with rice. The mushrooms were the best part, providing great texture and an earthy taste. A versatile recipe to use with other types of fish.

Thai Grilled Chicken with Sweet Chile Dipping Sauce

I found this an interesting way to marinate chicken and the flavours were quite pleasant. I put in extra cumin so that spice seemed stronger than any other flavour. I used a whole can of coconut milk, and even though it marinated overnight it didn't seem to come through. However, it created a very tender piece of meat and in the future I might play with the level and combination of ingredients. I used chicken breast meat and cut them into bite-sized pieces and skewered them over the grill. The sauce didn't seem to have as much appeal. The flavour from the chicken itself is probably good enough to stand on its own.

Avocado Salsa

I love this avocado salsa. It is tangy, refreshing and provides an interesting melange of flavours and textures. The avocado is the binding element of the recipe. It seems to balance the tanginess from the other ingredients and provides a counter smoothness to the salsa. Great party food.

Pumpkin Bread IV

Rather disappointed with this recipe after all the rave reviews. Maybe it was all the hype, but the pumpkin bread was just plain average. It was perhaps on the sweet side, although the combination of spices was alluring the overall bread wasn't anything to write home about.

Beth's Spicy Oatmeal Raisin Cookies

This recipe is all about using the best ingredients. Every element came together to make a cookie infused with spice, sweetness, texture and wholesome goodness. I had added a little bit more cloves, which made the cookie more fragrant and tantalizing. Based on another recipe, I also added three tablespoons of milk. The cookie was both crunchy on the outside and tender on the inside. A really great recipe that combines the best of all of the ingredients.

Baked Dijon Salmon

Excellent weeknight recipe that can double for a wonderful dish for guests as well. I omitted the nuts and used grainy dijon mustard. I was also very generous with the honey and mustard. Can be done to taste. Absolutely a keeper.

Raspberry Lemon Muffins

After reading all the rave reviews, I was expecting a sensational tasting muffin. Unfortunately, not only did it taste dry and bland, it was also very unappealing to the eye. Muffins should look golden; this one was white and pasty. I put it under the broiler to brown the top. But that did not solve the taste problem. While the lemon and fruit flavour were apparent, the muffin itself was decidely dry and lacklustre. I have tried many good muffin recipes, and I will not be keeping this one.

Gourmet Tuna Salad

Interesting blend of textures of flavours. Unfortunately, I did not have almonds on hand so I omitted that from the recipe. I can imagine, however, the crunchiness from the nuts would have been a great addition. I also used yellow peppers in replacement of the celery. I've never tried tuna salad with sour cream, so this was an interesting taste. Next time, I would probably add less of both the sour cream and the mayo as it was a bit too creamy for me. Overall, I quite enjoyed it.

Great recipe for a fast and satisfying meal. I used chicken broth instead of water which provided an extra layer of flavour. Yum. Would make it again for a quick and hearty week night dinner.

Ravioli Dolci (Sweet Ravioli)

This was a fun recipe to make and I used a circular pasta cutter instead of a wheel to cut out the dough. I also used canned cherry pie filling instead of cherry preserves. Next time I will try it with preserves. The dough was nice and tender and the almond extract combined with lemon peel provide a rich nutty and tangy flavour. Interesting, I would make it again.

Tex-Mex Corn Chowder

I was really disappointed with this recipe after having read all the rave reviews. I found the soup to be goopy, unappetizing and distasteful. The cream cheese which I thought would be the central highlight, in fact, made it undesirable combined with the salsa/picante sauce. It also looked messy and tasted like the ingredients was thrown in for a cheap meal.

American Lasagna

This is a very hearty and substantial meal. I added green peppers along with the onion and garlic. It tasted very good, but lacked fire and depth. Perhaps needed some spicy sausage or seasoning such as dry red pepper flakes or cayenne pepper. I would make this again with modifications to create a deeper level of flavour. Perhaps with more interesting vegetables such as zuchinni, mushrooms, spinach or whatever else tickkles your fancy. Great, basic recipe.

Gazpacho II

I used this recipe as a guide along with another gazpacho recipe I found. I didn't bother with adding pimentos or chives because I had neither, but I did add freshly minced parsley. Although it was easy to make and very flavourful, I thought it seemed to be lacking something. It needed an extra kick. As well, the olive oil only coagulated when refrigerated for a length of time and made the soup a tad too greasey. I would either omit that next time or add substantially less.

Avgolemono

Maybe I added too much lemon. I used bottled lemon juice instead of a fresh lemon. But it was pretty bland and boring. The egg mixture was unappetizing. Next time (if there is a next time) I wouldn't beat the eggs completely. Chunks of eggs would be better.

Easy Strawberry Lemonade

What a great recipe. I made enough for everyone but me, so unfortunately I didn't get to try it. But everyone thought it was a great drink. Instead of using frozen strawberries, I added fresh ones.

Easy Broccoli Quiche

Well, I must say I didn't follow this recipe exactly. I used it only as a guideline and it turned out very well. I improvised and added both cheddar and swiss cheese. I didn't bother adding garlic, but I'm sure it would have tasted great with it. I also made my own pastry crust, so it had a real homemade taste and feel about it. My pastry crust stuck to parts of the pan, but that's another issue altogether. All in all, it was a very good recipe. I got rave reviews when my guests tried it.
