Maille® Vinaigrette Dressing

I added this easy dressing over roasted orange beets, cooled them in the fridge and served them with parmesan crusted basa filets. The cold and hot contrast is wonderful!

To Die For Blueberry Muffins

I liked this recipe, especially the crumb topping. I made these when my wife came home with 15lbs of fresh BB's. I took some to my work and sent some to hers. I was asked if I had brought the muffins from Great Harvest Baking Co. here in Salem, OR. Believe me that this was a HUGE compliment. I made small additions to this recipe because it is solid as written. First I added approx 1 TBS lemon zest and 1/2 tsp lemon extract. I used applesauce and approx 1 to 1 1/2 TBS of EVOO for baking. These were super moist and I am sure that I brought down the fat count. Thanks for a great recipe!

Apple Pie by Grandma Ople

I have made this twice now. First time followed the recipe but doubled the caramel sauce. Turned out amazing. Second time I cooked the apples in the sauce as suggested by another reviewer, BIG mistake. It never set up. All and all a great recipe. I even had a co-worker tell that this was the best pie they had ever had. I will continue to use this recipe and make extra caramel to drizzle!

Bob's Awesome Lasagna

This was my first attempt at lasagna and we enjoyed it. I thought that it was a little bland compared to my Mothers recipe, but can you ever really top Mom? Will try variations on this great starter recipe. Thanks Bob!

Baked Tofu Bites

I liked this recipe. I baked my tofu twice as long hoping to get it a little crispier. I served with blanched broccoli dressed with olive oil, garlic and red pepper flakes. Very filling meal.

Curried Shrimp with Sugar Snap Peas

Wife has raved about this dish all night & this morning too! Loved it myself. Wife says it was restaurant quality & I must make it again soon. Made a few changes: added 1 cup cauliflower, 1 cup broccoli, one small summer squash, one small zucchini to boiling water with noodles for 4 mins. To shrimp added 3 teaspoons curry powder & extra teaspoon of red pepper flakes (we like it hot). Added 1/2 cup cilantro about 5 minutes before serving. EXCELLENT!

Chicken with Tomatoes and Olives

Really easy to make and my wife loves it. I use 1/2 black olives and 1/2 green olives for a change. I add the tomoates close to finishing the dish. I just don't like them to be mushy. Will make again. Thanks for the recipe!

Zucchini Parmesan

Very easy & delicious. What more could you ask for? I added sautéed mushrooms, fresh sliced tomatoes & a bit of mozzarella cheese to the layers. I baked it at 375 for 30 min. I will absolutely make this dish again. Thanks!

Zucchini Cobbler

This recipe was wonderful and a lot of fun! I made a few changes with it: 1 cup Splenda and ½ cup brown sugar for a little depth. Very easy to make. The only thing my wife could say when I told her it was zucchini, not apples, was WOW. I had her take some to people at work and she got the same reaction.
