Baked Teriyaki Chicken

My husband ended up making this in a skillet instead of the oven, but it was excellent. I can't wait to share this "homemade" teriyaki chicken with my parents as they normally buy theirs in a bag from a club store.

Kalua Pig in a Slow Cooker

I have made this several times for large parties and it is always a big hit. So easy to prepare. Also makes for easy party prep as I make this ahead of time then just reheat in the slow cooker until serving time. We always serve this with sandwich rolls and several bbq sauces.

Slow Cooker Italian Beef for Sandwiches

Very good. My husband thickened the juices just a bit with some corn starch, otherwise followed the recipe. Served on hoagie rolls with provel cheese.

Roast Pork with Maple and Mustard Glaze

Absolutely LOVE this. Another great pork recipe to add to our normal weekend meal rotation. Our 2 year old eats this as daddy makes a sauce out of the glaze and drippings. The only thing we need to change is making additional glaze so we have more sauce.

Slow Cooker Chicken Taco Soup

We used broth instead of beer (not beer drinkers) and tomatoes without the chilies (we have young children that don't do well with chilies), otherwise we followed the recipe. This was very good served over some orzo pasta

Apple Bread

Made this for a family brunch and everyone raved about it. I always exchange applesauce for oil where possible, so I did do that. And I also followed Carolyn's suggestion of using brown sugar for some of the sugar. I also always leave out nuts because my family isn't fond of them. We also have young children in our family and I do not want to limit someone's food selection if they are allergic to nuts. Still giving it 5 starts even though I changed around some ingredients as I don't believe my changes deviated from the original recipe that much. On a second batch of bread, I did add more applesauce (around 1 cup) and that was great also.

Balsamic Roasted Pork Loin

Excellent!! My "go to" pork roast recipe now. My whole family (hubby and my dad especially) rave about this pork. Definitely a dish to impress guests. I take care of the roasting of the pork, then my husband makes a gravy with the drippings. He pours the drippings into a gravy seperator, then pours everything but the fat into a saucepan. He then adds a little white wine, sugar (to taste), and corn starch to thicken. Just go light on the gravy when pouring over the pork until you figure out the right ratio of pork to gravy for your taste. The gravy is strong, more of a "drizzling" sauce, than a gravy.

Burgundy Pork Tenderloin

I only used 1 cup wine and 1 cup beef broth. Then when making the gravy we used cornstarch and water to thicken and my husband added salt and sugar to taste. Everyone loved this. I am so happy to find a pork recipe that is still juicy at the end of cooking. Delicious.

Bacon Wrapped Water Chestnuts II

We love this recipe. I use Miracle Whip instead of Mayo (personal preference) and instead of baking the wraps in the oven with the sauce, we throw all of it unto a slow cooker and let them simmer away. Sometimes I'll make extra sauce to cover all the wraps. For big parties, I'll prep everything the day before and get everything into the slow cooker crock (if not removeable, transfer to a storage container) and place it in the fridge - this allows everything to marinate. The next morning I return the crock to it's base and turn it on.

To Die For Blueberry Muffins

My family loves these muffins. I make them for brunch with the Christmas Breakfast Sausage Casserole (modified) and the Fresh Fruit Salad, all from this site. This menu is always requested when my in-laws come to town and it was what I used for my daughter's baptism brunch and my niece's 1st birthday brunch.
