Peanut Butter Chip Chocolate Cookies

I just served the first batch of these still warm and, after the first bite, my daughter said they're the best cookies she's ever had. (And I make some really good chocolate chip cookies, too.) My husband barely finished the first one before he was reaching for another. YUM!

Grilled Chicken Burgers

My picky husband ate two of these so I think that's a pretty good endorsement. :) I cut the recipe in half and followed instructions except for using garlic powder in place of raw garlic and not adding the diced tomato. Not "OMG" great, but they were tasty and a nice change of pace from our typical menu.

Crawfish Chowder

My husband wasn't thrilled when he found out I was making this for dinner and told me he has never liked any chowder he's tried. He loved this so I give it 5 stars. :) I only used half the crawfish (frozen from Super Walmart - thanks to others who suggested looking there!) and it was plenty; enough to have some in every bite. Two pounds would have been WAY too expensive. Otherwise followed the recipe as-is. I only wish it wasn't so high in fat or calories.

Lime Chicken Soft Tacos

YUM! My daughter asks for these all the time. I used the slow cooker like a few others suggested, and also cut back a little on the green onions. And I ALWAYS increase the amount of lime juice for extra flavor.

Apple Squares

The batter was a lot thicker than I expected - almost like a dough. (Not sure if it was supposed to be like that?) The end result is like an apple cake - pretty good but nothing special. After seeing all the reviews I wonder if I did something wrong...

Apple Scones

Eh, just so-so. I didn't have much luck with these. The dough was mush so it wasn't easy to knead without sticking to everything. I added extra apple and cinnamon after reading other reviews and I still thought these were bland. Not awful, just not something I'd make again.

Chocolate Peanut Butter Cup Cookies

YUM YUM. I'm still baking but have already eaten a couple cookies from the first batch. I used chunky PB since that's what I wanted to use up and I also happened to have a bag of mixed choc and PB chips so that was perfect. They're delish!

BBQ Pork for Sandwiches

I made this for Christmas Eve dinner but tripled the recipe and used my large electric roaster. It turned out GREAT! I loved how easy it was and my mom loved how great her house smelled. (And everyone else loved a yummy meal without having to cook.)

Eggplant Parmesan II

Dang, this was good. I'll admit I was pleasantly surprised since I only had one small eggplant and halved the recipe, didn't have bread crumbs so I substituted crushed crackers, and broiled part of the time to speed it up in time for dinner. :) It's the first time I've attempted eggplant parmesan and it was SO good!

Crazy Crust Pizza Dough

This recipe saved the day! I promised my 2 year old that we'd make pizza tonight but the package dough mix I bought didn't turn out. I tossed it and had to find something else that would work in a pinch and be quick. This did the trick! I only used one egg like others suggested. Since our only toppings were going to be sauce, cheese and pineapple, I baked the crust plain first until it wasn't mushy, then added all the toppings and baked another 10 minutes. It was good! I'm so glad I found this recipe or we would have had to heat a frozen pizza instead.

Spiced Chicken Loaf

I was impressed! I'd bought some ground chicken on sale and needed to find a use for it. Honestly, I didn't expect this to have much flavor but it did. My husband really liked it too. I added some BBQ/ketchup on top as others suggested. Delish!

Chocolate Eclair Dessert

This was soooo good. I made 2 pans to bring to work and it was gobbled up in no time. People were still talking about it the next day. I took the advice of making it the night before so the crackers had time to soften, and also warmed the frosting to pour over instead of spread. Perfect!

Honey Glazed Ham

I'd never baked a ham before but there was a great sale at the grocery store so I decided to give it a shot. This recipe gave it a slightly sweet and deliciously juicy flavor. I'll definitely use this one again!

Buffalo Style Chicken Pizza

We didn't really care for this. Sorry. I used less bleu cheese dressing than called for (as others suggested) and we still thought maybe it was too much. It was just too rich and had kind of a funky taste. My husband who loves buffalo wings asked that I not make this again.
