Chicken Scampi II
This got a rare big thumbs up from both the kid and the husband. I did take the advice of others and add more garlic, more lemon (2 whole squeezed lemons b/c I felt like that's how much it took to get the flavor), dredged the chicken lightly in flour, and added some white wine. Tossed it with angel hair pasta and it made a delicious meal we all enjoyed. I just wish it wasn't so high in fat or calories so I wouldn't feel guilty about making it more often.

Peanut Butter Chip Chocolate Cookies
I just served the first batch of these still warm and, after the first bite, my daughter said they're the best cookies she's ever had. (And I make some really good chocolate chip cookies, too.) My husband barely finished the first one before he was reaching for another. YUM!

Grilled Chicken Burgers
My picky husband ate two of these so I think that's a pretty good endorsement. :) I cut the recipe in half and followed instructions except for using garlic powder in place of raw garlic and not adding the diced tomato. Not "OMG" great, but they were tasty and a nice change of pace from our typical menu.
