Balsamic-Glazed Salmon Fillets

Great recipe! I only had two fillets and still used the same amount the recipe called for and I thought it was the right amount. I used about a teaspoon of olive oil to saute the garlic...thought it added a nice flavor. I didn't have fresh oregano so sprinkled the fillets with dry and it worked fine. I made a asparagus and lemon pasta (own recipe) to go as a side....perfect compliment. Our impromptu guests could not stop raving about the salmon flavor! This will be a keeper.

Homemade Black Bean Veggie Burgers

I used the other recommendations of adding 2 eggs, and using about 1/4 cup more bread crumbs. I also added about 1/4 cup of shredded chedder cheese which made it stick together even better (not to mention add a nice flavor). I cooked mine in a skillet with some olive oil - turned out great. Next time I think I'll make six patties instead of 4 and make them thinner (they were a bit too thick and big for my tastes). My boyfriend who is a meat eater had two of these! I'll make again for sure.

Multigrain Pancakes

Great texture! It was nice knowing they were healthy and not from a mix. I added another tablespoon of milk to help with the consistency of the batter. I also used strawberries and vanilla yogurt as a topping, which added a nice touch. Thanks!

I made these for my office party and they got good reviews. My only complaint is that they are so thick...I think I would do them in a 9x13 pan next time. This way you can get more squares and they aren't quite as rich. I also used almond extract in crust, and I think it added a very nice flavor. Overall, good (fairly easy) recipe to have on hand. Thanks!

Split Pea Soup with Tofu

very hearty and easy to make. I did not cook it for the whole two hours...it was done in about 1. I also added whole spinach leaves as well as the chopped for a different texture. Good for cold days!
