Overnight French Toast I

We loved this!! i had fresh blueberries, but since it's cooked, i figure frozen would be just as good. i also used old sourdough bread and buttermilk - wow! thanks for this great breakfast. i am always looking for ways to use eggs and this recipe is great for sunday morning when i really don't want to cook. thanks again!

Raspberry Icebox Cake

i agree, the graham cracker ratio is way off. it must mean 24 small sections of crackers. but otherwise a great treat. i also used mini marshmallows since they melt faster.

Coconut-Apricot Truffles

Forget the almond extract! it was WAY TOO STRONG. i made it a second time with out it and it turned out perfect. my mother wanted to add some sweetener - honey or sweetened condensed milk is good. also, best rolled in coconut dust (throw unsweetened coconut in a processor) the sweetened shredded kind doesn't stick real well. truly though, i love raw food recipes and this one was great - even my 2-yearold loved it!

Skillet Zucchini

My family really enjoyed this! we traded the bread crumbs for croutons on the side; also we skipped the soysauce and mixing the cheese in - just let it melt on top. But what a fun meal! reminds me of "Christian's Crazy Sherpa Potatoes"- try it!

Fresh Rhubarb Pie

We loved it! the first time i made it, i added rasperries from the garden as well - but it turned out way too sweet! so time number 2 we cut the sugar in half and still used raspberries- perfect! word of caution, we like our pie a bit tart, so if you don't then keep the sugar. i just figure that rhubarb is supposed to be tart. anyway, great recipe!

Christian's Crazy Sherpa Potatoes

A great basic recipe! i really enjoyed adding veggies and spices. I added Spike! and asparagus. We ate the 4 serving version between three adults (it was the main/only course) Great!
