Chicken Lasagna I

Not wonderful... not bad though! I subsituted mozarella for cheddar just because I thought it made more sense... I also doubled the sauce. With extra noodles and filling I made lasagna roll ups which is a quick and easy alternative. Think next time I would kick it up with some fresh herbs or white pepper.

Harvest Squash Rolls

These were just alright. The flavor was fine but the texture was chewy and dense. One of my kids liked them a lot, but I think Ill stick w/ the butternut squash fries recipe from this site instead of these.

Chinese Chicken and Potato Soup

Very Tasty. I had some cooked chicken leftover so I simmered the veggies in chicken broth until soft and then i just threw in the diced chicken. This is one of those recipes were nature's ingredients are the star and nothing fancy is needed to make it a winner. My husband and children ate this up. Thank you for sharing!

Southwestern Egg Rolls

I made the mistake of using egg roll wrappers instead of the tortillas. The filling I think is way to dense (and perhaps to moist) for the delicate egg roll wrappers to handle. ---But that was my mistake, not the fault of the recipe. It sure did have a kick to it!! Pretty good...I served with sour cream.

Italian Peas

Im surprised how good this was given how conventional all of the ingredients were. I used chicken boullion granules because the peas had enough water with them since they had been frozen. Delicious!! They were not mushy at all. I think I may never have plain 'ol peas again!!

Gingerbread Cookies

I used this recipe BUT I mixed in two large eggs to bind it all. Even then I had to really knead the dough. Rolling it out was much tougher than sugar cookie dough because it is so much more dense. (but the good news is it doesn't stick like sugar cookie dough!!) Decent enough but the eggs are a MUST!!!!!!

Am I the only one who ended up with "batter" instead of dough?? It was so runny...Did i Beat the butter too long?? So weird---smelled good, but what a mess!! Im sure it was my fault but I went over again and again and I have no idea what went wrong.

Taco Roll-Ups

I didn't have any picante so I used canned tomatoes and garlic added some tobasco and ran it through the food processor to make it smooth.--Worked fine. I initially served these at a dinner party about an hour and a half or 2 hours after making them. They were really just so-so. The next day I went to dinner at a family member's house and I had some rolls leftover that I hadn't cut up yet. I cut those up and brought them. Much better the next day!!!! I really think these need to sit overnight to get the cream cheese more solid as well as to have all the flavors meld together.

Very good tasting and moist cake. Due to the extra coffee liquid, mine required more baking time, but I just kept my eye on it. I'm sure I'll be making this again!!

Turkey Lo Mein

I used a grocery store roasted turkey breast instead of the ground turkey and minced garlic instead of the garlic powder. This was fast and easy. (30 minutes max) My kids liked it a lot and said it tasted just like "take-out." It doesn't have complex flavor but it is a great dish for the whole fam!!!

Spicy Roasted Pumpkin Seeds

I make these every year from the pumpkin we carve as a family. They are delicious. My only change is I use enough veggie oil to coat the seeds and swirl them around in it. (In place of butter) I only wish our pumpkins yielded more seeds!! These go fast!

Michael's Foccacia Bread

I added thin strips of green onion to the dough. I split the dough in half and shaped each half into flat oblong loaves on greased cookie sheets. This worked perfectly and the sizes were wonderful. The possibilities are endless with this recipe.
