Award Winning Soft Chocolate Chip Cookies

These were really good but still not the best ever in my opinion. I've only made one batch but it seems like the pudding makes the cookies more crumbly but they're still really moist. They didn't really spread out at all so you can fit a lot on a sheet... and if you want them kind of flat you'll have to smoosh the dough flatter before baking. I'll probably make these again for a party or something, they're good!

Stuffed Green Peppers I

I am not a big fan of green peppers but this dish has definitely moved them up on my list, it's so delicious! I pretty much doubled the recipe but will be freezing half for later. Instead of the whole peeled tomatoes I added a can of tomato sauce (it's what I had) and only used 1 can of diluted tomato soup poured over top. I also didn't mix the cheese in with the meat and only sprinkled it on after I took it out of the oven. I'll definitely make this again and again!

Ziti with Italian Sausage

I had to make some revisions based on what I had on hand... I used Rotini pasta, omitted celery since I was out and used a jar of 4-cheese spaghetti sauce since I didn't feel like making the sauce from scratch. I also added some oregano, basil, parsley, rosemary, pepper & a little sugar to cut the acidity of the sauce. I just mixed everything together in my casserole dish instead of bothering with layers & baked it at 350° for 25 minutes in our convection toaster oven so I didn't have to heat up the entire house... Super super good!!

Parmesan Sesame Chicken

Sometimes if I have it on hand I'll add in some Asiago or mozzarella cheese to the breading mixture. I toast the sesame seeds in our toaster oven too. I also like to double bread these... I spray my baking dish with some non-stick spray & drizzle a little olive oil over the chicken before baking. It comes out delicious and crispy every time! I think this is my favorite recipe for breaded chicken!

Chicken in a Pot

I used Sarah Stephan's recipe for Parmesan Sesame Chicken instead of the directions in this recipe, just because it's my favorite for breaded chicken. I made the sauce in a sauce pan and poured it over the chicken when it came out of the oven... fantastic!! The sauce has wonderful flavor considering the amount of ingredients! I did increase the amount of broth & tomato paste until I had a decent amount of sauce but other than that I made no changes. The next day I put the breaded chicken breast on a bun with some mozzarella cheese and had a chicken sandwich- yum!

Pineapple Bars

4.5 really... My husband loved them & ate pretty much the entire pan. They have amazing flavor but I had an issue with the consistency. Something I'll just work on the next time I make them... Thanks for sharing the recipe!

The first time I made this I loved it... every time after it's just been average. I haven't changed how I made it either, oh well. It's easy to prepare and pretty tasty for the amount of work involved.

Absolutely Ultimate Potato Soup

This is very, very good! I didn't have cilantro on hand so I substituted some basil, parsley & a dash of mint- it was excellent & I'll probably continue to use that modification! I put half of the cooked bacon into with the potatoes to simmer. I pureed about half of the soup and felt it was too thick so I added 1 can of chicken broth- it was nice & creamy and still had nice chunks of potatoes! We crumbled the remaining half of the bacon over our bowls & sprinkled cheese on top... delicious!! I will definitely make this again.

Pasta Fagioli Soup II

I thought this was great! I had to make a few changes: I added 1# italian sausage, I only had 1 can of the Northern beans & used dk red kidney beans as a sub for the 2nd can, I left out the bacon, added onion & fresh garlic, omitted the salt, and used ditalini pasta. After tasting I added some sage, marjoram, more basil & some sugar to cut down on the acidity from simmering the tomatoes. I may try adding bacon to the leftovers- I mainly didn't feel like cooking it in addition to making the soup. Overall great recipe & I'll make this again with the same modificaitons.

No Bake Fudge Cookies

This recipe is great... I love the peanut butter to cocoa powder ratio! Sometimes we add a little more PB and oats depending on our mood. Raisins are never used, hubby is picky, but I'd like to try these with some dried cranberries! YUM! Super fast, super easy and delicious!

Pretty good... Next time I might find a way to make it a little saucier, a light cheese sauce, for the husband. I thought it was good as written but think a little cheese sauce would be a nice addition.

This is exactly like Galumkie but without the cabbage! Very delicious!! I like to eat mine with sour cream and sometimes ketchup. Great served with mashed potatoes!

Mouse's Macaroni and Cheese

I think this is my favorite mac & cheese recipe so far... The first time I made it the flavor was great but the texture was terrible. I used crushed red pepper flakes in place of pepper and omit the breadcrumbs. I baked it covered the entire time. After I take the foil off & sprinkle Panko breadcrumbs on top and put it under the broiler on low until it was nice and golden brown! I plan on experimenting with the flour next time for an even creamier texture. Great recipe!

World's Best Lasagna

The only change I made was to omit the fennel seeds since i didn't have any, I added a bay leaf to the sauce instead. This recipe is awesome!! My husband usually won't eat anything with ricotta so the fact that he finished his plate with no complaints was huge for me. I thought it was wonderful! Next time I'm going to leave the foil on for almost the entire cooking time and only take it off to brown the cheese for the last few minutes. Following the directions with my oven resulted in a crusty top layer of overcooked/lightly burnt cheese about 2" all the way around, but it still tasted great!

Skillet Chicken Pasta

The only modification I made to this recipe was to add about a 1/2 cup of chicken broth to the veggies to help soften them and add some flavor while they sauteed. It also helped the sauce go further in the end. I am not a fan of green peppers at all- even in canned sauces with GP added it gives the sauce a funky flavor in my opinion, so I was worried with this recipe. I left them in for my husband and I can honestly say I wouldn't have even known if I hadn't made it. All of these ingredients combine wonderfully to make a really well rounded sauce! This recipe is great and wasn't too hard to make at all! Next time I'm going to experiment with getting more flavor into the chicken...
