About this Cook
I'm a Pacific-Northwesterner firmly rooted in humid South Florida with three little guinea pigs. Well, really they're 3 amazing, fun children who will try any of my cooking attempts at least once.
My favorite things to cook
I really enjoy bread making, particularly since most of my attempts have been miserable failings. With each fresh attempt, these failures give me something to look forward to in that perfect loaf of bread - - - - - Update...I cheated (how it pains me to admit this!) and bought a bread machine. This virtually eliminates the miserable failing probability, but still there is great reward in that wonderful smell - even if all you did was toss a few ingredients in a large metal canister and punch a few buttons, right?
My favorite family cooking traditions
Growing up, the holiday fruit salad was always my duty - a tradition that was passed on to my daughter. Recently though I found a recipe here for ambrosia that we've tried and enjoyed so the tradition has been updated some, thanks to AllRecipes!
My cooking triumphs
Not long ago, my daughter asked me if she could have my recipe box when she moves out of the house (she's only 12!). I consider that a major triumph. If my children have memories of warm happy tummies I'm a satisfied woman.
My cooking tragedies
As a young teenager, I decided to try my hand at frying chicken. With efficient manner and complete confidence, I floured the chicken, heated the oil and began to fry away. I cooked two large legs to a beautiful golden crisp. When I sat down to one of those legs though, I found it was completely raw inside. This was my first..and last..attempt at fried chicken. Maybe one day I'll locate that false bravado and try again...

Curried Coconut Chicken
This has become one of my favorite meals. Served with either rice noodles or jasmine rice and you cannot go wrong. I've used coconut milk and a couple of times even refrigerated cream of coconut. Also, I use red curry paste instead of curry powder, but have gone the curry power route as well and the results were just as good. Yummy! Thanks for sharing.

Buttery Soft Pretzels
These pretzels were fantastic! After sending a few to school w/ my teenaged daughter, I suddenly had more-than-usual stop ins from her friends and flat out pleas to make them some :) I toss them in a melted butter, garlic, salt, parsley combo mix that is gobbled up with quickness.

Easy Batter Fruit Cobbler
This was very good! I used blueberry and raspberry - 50 minutes was a bit long for these berries and they ended up quite mushy, but the flavor was absolutely wonderful .. next time I'll try cooking for more like 40 mins & see how the berries fare. I didn't have baking power after knocking mine into the sink (drat!), so I used self-rising flour with no ill effects - just remember to leave out the salt as well as the baking power if you make this substitute as self-rising flour has both added in. Thanks for sharing!
