Zucchini Bars

Excellent cake! I made it exactly to directions. I did need to bake it for about 15 minutes longer than the recipe stated, and I squeezed the water from the zucchini before adding to the batter. Apply the frosting liberally to use it all up.

Roasted Garlic Cauliflower

So great! This may be the only way I ever eat cauliflower again. PS--You can't add to much garlic, roasted with the oil and topped with Parmesan... MMMM... it doesn't get any better. PPS--Feel free to throw in any other veggies/root veggies you have have in the fridge.

Best Beef Dip Ever

Very good recipe. I made it exactly as described and had it on a roll with hot banana peppers and Munster cheese. I might try adding extra spices to the crock pot next time. I like the suggestions of adding Worcester sauce and peppercorns. Can't wait to have the leftovers tonight!

Savory Roasted Root Vegetables

Excellent! I love the flavor of the wine with balsamic! A very wonderful way to eat your root vegetables. I had everything but the carrots on-hand from my CSA, and it was a great dish (and leftover) to make.

Pesto Sauce

Great basic recipe to use and feel safe that you're using the right amount of each ingredient. Sunflower seeds are another good pine nut replacement, but I recommend using about a cup in that case.

Spicy Honey Mustard Pork Roast

Very good recipe, and leftovers tasted even better the next day. A little sweet for my tastes but my husband loved it. I might up the mustard and reduce the honey next time, because this definitely is not a "spicy" recipe. It is a must to add just a little water at the bottom, but I overdid this and my sauce wasn't as thick as I would have liked.

Marinated Grilled Shrimp

Fantastic! Definitely give the shrimp at least an hour to marinate. These were amazing. My fiance grilled them to perfection (a little crispy), and three of us plowed through those 2 pounds! Delicous... I can't wait to make this again. This is a great summer recipe to make and enjoy outside.

Home-Style Vegetable Beef Soup

Well, I made some changes but enjoyed this recipe! I made everything in 1 pot (no microwave necessary!). Instead of tomato cocktail, I used jarred tomatoes and 3 cups of broth. Even then, I thought the soup was more of a stew than a soup. But, all in all, a very nutritious soup! Thanks!

Catherine's Spicy Chicken Soup

Excellent! I made it exactly by the recipe, and the soup turned out phenomenal! I am actually proud of myself for how well it came out! I recommend cooking the chicken in the water to make the broth and adding the sour cream to the soup while cooking. These things really add to the rich quality. The sour cream will not be overbearing. Instead it will add just the right color and favor to the soup (believe me--I am not a fan of sour cream). I shredded the chicken with the help of a vegetable peeler, and the process took only a minute or two.

Chicago-Style Pan Pizza

The recipe for this topping is absolutely wonderful! We loved it! So much better than premade pizza sauce, and the spices are perfect. But, next time I will make my own dough. I bought premade from the store, and it was not good and spoiled the greatness of the topping.
