Hummus III

I modified this slightly but loved it. I used 2 cans of garbanzos and 2TB of tahini and everything else was about the same. I used a little more lemon juice and some of the reserved bean water to thin the hummus out. The longer it rests, the better it tasted. By the 3rd day it was amazing. I put everything in my Vitamix which is a must have for something like this. Thanks.

Roasted Garlic Bread

This was the best garlic bread I ever had and next time it will be better. I roast my garlic differently and it works every time. Cut the tip side off to expose all the cloves. Put the whole head in some aluminum foil and top with EVOO, s&p and wrap completely in foil. Less cleaning this way. Put in the oven at 350 and for this I go 45 minutes so it's super soft. I melted the butter and then put the melted butter, roasted garlic and some Parmesan cheese into my Vitamix to puree. A beautiful spread is made. I do not toast the bottom as I use French baguette which is already kind of hard and I don't like crispy garlic bread. I top my bread with the spread and more Parmesan cheese and put under the broiler. The bread is soft in the middle and browned on top. Next time I will grate some mozzarella and put that in there as well. PERFECT.

Slow Cooker Salisbury Steak

I cook all the time but my wife for some reason loves those frozen Salisbury steaks. I can't stand processed food so I didn't get it. I finally told her I would make some. This was NOT salty at all. I used 93/7 ground beef and didn't change a thing. I used the cream of chicken and whisked the au jus mixture until smooth before throwing it over the patties. I did flash fry them first with flour as well. We put this over rice and the sauce was delicious. I will definitely be making this again.

Easy Mint Chocolate Chip Ice Cream

This was an excellent recipe. The only thing I will change next time is the amount of mini chips. I will at least cut that in half if not more. Great base to any ice cream though. Update: I used a 1/3 of a cup if mini chips and that was Perfect. I don't us the food coloring, not needed.

Balsamic Roasted Pork Loin

i loved this. I added honey but other than that I added nothing. Loved it and so did everyone else. The honey added sweetness. I did put 2 yellow onions that were sliced and some carrots. Perfect.

Basic Chicken Salad

I was looking for a simple recipe and this was it. I cut chicken breasts into small cubes and seasoned with S&P, garlic powder and onion powder. I then baked for about 20-25 minutes on 400 on a baking sheet. I let the chicken cool and added the mayo, lemon juice, a little more S&P, some small diced onion and celery. My family doesn't like nuts in chicken salad so I left out. I put on toasted bread with some lettuce, tomato and sliced pickle. It was great.

Crispy Fried Chicken

This was great. Needs a little more flavor but the chicken was crispy on the outside and moist on the inside. I did drums for 17 minutes at 375 in my deep fryer. Update: I made this again but added 2tbs of seasoned salt as well as S&P to the flour. This made it much more flavorful. I also make chicken nuggets with this recipe. I like those better than the chicken pieces.

Cheese and Bacon Potato Rounds

These were great. First, I used EVOO instead of butter. I sliced all of the potatoes a little less than 1/2 inch. I put them in a bowl and used tongs to get the EVOO on them. I then put the on a large cookie sheet I have with a wire grate on it. I put them directly on the grate and the salt and pepper just one side. Cooked for 40 minutes and turned half way. Used the real bacon bits in a bottle and the topped with cheddar cheese. Back in the the oven under broil. Had sour cream on the side. Had the onions but didn't need them. This was great.

Boilermaker Tailgate Chili

I made this recipe as it says and it came out perfectly. I didn't add any chile peppers because of some picky eaters that night but it still came out great. Someone who doesn't like beans loved it, my mom who doesn't like chili loved it and all kids ate it. I will make chili like this from now on. Thanks!

Pressure Cooker Beef Stew

This is a very good base. The Pressure Cooker is amazing. I like to use just one pot when I can so everything was cooked in the pot. S/P on the meat then flour, I used beef broth instead of the bullion and water. I like my stew with red wine so I added about a cup of wine to the 2.5 lbs of beef. Once I heard it start I cooked under pressure for 10 minutes then released my pressure and added raw potato, raw celery and some frozen peas. Then back to pressure for another 10 minutes. Textures were perfect. I love a pressure cooker. Next time I will do no peas and maybe add corn and/or green beans. All in all, this is a great go to recipe that takes 45 minutes on a weeknight.

Grilled Bacon Jalapeno Wraps

I have mad these several times and they are always a huge hit. I bake mine in the oven on 375 for 50 minutes and flip them over half way. I also put them on a grate on a cookie sheet so they dont sit in the bacon grease that drips off. Perfect!

Peanut Butter Cup Cookies

Wow! This was great. I baked for 8 minutes in a couple of mini muffin pans and they came out just underdone which is how we all love them! I did refridgerate the batter after it was made for about 10 minutes to ensure that it was easier to roll. Thanks so much!Also, make sure you freeze your cups before putting them into a warm cookie.

Ultimate Twice Baked Potatoes

Wow! The only thing I did differently was put some finely diced garlic in but other than that is was perfect! I also Roast my potatoes at 350 for one hour after i lather them in EVOO and Kosher salt. Do not wrap in foil. Just poke some holes in the spud with a fork(about 8-10 times, all around) then the oil and salt. Throw right on a rack in your oven towards the top and cook for 1 hour. Perfect every time and that way you have a great seasoned skin that you can eat as well. I also did not use bacon. Didn't need it.

Mom's Macaroni and Cheese

I made this recipe exactly as it was written and it was perfect. I used sharp cheedar and it was delish! I have made fancier one's than this but the kids just love this version. Just like Kraft but better for you!

Creamy Au Gratin Potatoes

This was pretty good indeed. I layered the potatos and then cheese and then potatos and so on until it was all down. I also added at least 1 extra cup of cheese, may do 2 next time. Also, I didn't add enough salt so they were slightly underseasoned but I would rather under salt than over salt! Thanks!
