Spicy Refrigerator Dill Pickles

Microwave Bread and Butter Pickles

My sister sent me the link to this recipe, and we both spent the summer addicted to these pickles. They're so good, and so easy to make. If you have a mandoline, it really makes these a snap!

Slow Cooker Swiss Steak

This was so good - really one of those cases where the whole is better than the sum of its parts. The only change I made was to use about 2/3 of a bag of crinkle cut carrot 'chips' instead of the grated carrots. We'll definitely have this again, possibly over polenta.

Curried Squash Soup

This soup was a huge hit this fall! I was craving it constantly and everyone I served it to loved it too. When I first read the recipe, it seemed like a lot of steps, but I just baked the squash the night before, then assembled the soup the night we wanted to eat it. Delicious!

Quorn™ and Chickpea Curry

We love this recipe at our house! I've found that if I mix the ground spices together over the weekend or sometime when I'm waiting for something to finish in the kitchen and seal them in a zipper bag, this becomes less intimidating for week nights, since all I have to do is dump the mixture in at the right time. Makes life even easier.

Israeli Moroccan Couscous

Served this to a group and everyone liked it. It was a good way to clean up some odds and ends I had from the farmer's market. After reading some other reviews, I added a 28 oz can of tomatoes. If I do that again, will drain them first -- it added too much liquid to the pan. I think the key to this is to add the spices to the recipe much earlier, rather than at the end, to allow all the flavors to meld. Also, I used much more curry (approx 1 tsp.) and about a half tsp. of garam masala we had on hand.

Apricot Barley Casserole

I didn't have a 13 x 9 pan handy when I made this, so I used a 2.5 qt extra casserole instead. Could not fit all the liquid into the casserole, so I started with 4 c. of broth, and then added more through the cooking time, to a total of 6 cups. There was still some liquid in the casserole when I pulled it out at the end of the cooking time, but almost all of it absorbed into the barley as it stood, covered, waiting for the rest of dinner to be ready (probably about 15 - 20 min). More liquid might be cooked off in the shallower pan, but I'd think there'd be even more trouble fitting everything in. We served this alongside the Vegan Moroccan Couscous recipe from allrecipes, and everyone really liked it. I think this would also make a good side dish alongside a roast chicken or turkey, maybe in place of stuffing. We'll definitely be having this again.

Taco Seasoning I

Mixed up a big batch of this, leaving out the salt, and have used it in just about every Mexican dish we've had since. So nice to have on hand and be able to reach for just the one spice jar in the cabinet.

Asian Pasta Salad

Paired this with the Soy-Sesame Dressing also at Allrecipes. The two complimented each other perfectly. I used brown rice (1 c. uncooked) in place of the pasta and added some chicken from the deli and served as a main course. Both my husband and I loved it! Will be making this again. Great way to use up some summer veggies from the farmer's market.

Soy-Sesame Dressing

Cream of Tomato Soup with Pesto

I wanted a cream of tomato soup for a mid-day meeting, so I made the soup the night before and then kept it warm all morning, and stirred in the half-and-half and pesto right before serving. I thought it was excellent and received numerous compliments.

Luscious Chocolate Truffles

We used these for Christmas gifts for our neighbors and co-workers. Rather than risk scorching, I used the microwave to do the melting. Rolled them in cocoa powder (we didn't add any flavorings). They were very easy to make and everyone seemed to like them. We'll definitely be using this recipe again!

The proportions in this seemed wrong too me -- the sauce overpowered everything else. We may try this again with a homemade sauce rather than one from a can to see if that helps.

This was good, although the sausage I picked was a little too hot for us. Will try again with something a little tamer. Also had to cut back on the cooking time -- rice was done in ~20 minutes.

Black Bean, Barley and Turkey Chili

I didn't have any of the quick barley, so I used the regular kind, put in a whole can of chicken broth and cooked it for about an hour. This was so good the first night and even better warmed up for lunch the next day! My husband's usually skeptical when I use ground turkey in place of ground beef, but he even said he didn't think beef would improve on this chilli, and asked when we could have it again. This is definitely going into the regular rotation!

Stuffed Butternut Squash

I converted this recipe to a casserole by chunking up the cooked squash and mixing it into the stuffing. We were taking it to a potluck and it just seemed like it would be easier to serve that way. I also subbed zuccini for the brussel sprouts, and used a cup of brown rice. Everyone really liked it, and my husband loved it! Considering how hard it is to get him to eat vegetables some days, that's quite an accomplishment.
