Baked Ham

I was a little skeptical at first but since I was having a low-key Easter dinner, I figured I'd give it a shot. VERY glad I did! I had a 7.7lb fully cooked ham that I put in the crock pot with half a can of coke zero. After reading other reviews, I cooked the ham on low for 8 hours, but I think it was too long. It was still very moist, but I think it would have been done (140 temp) after about 6 hours. So my recommendation is to just use a good meat thermometer and you should be good! I'll keep using this recipe and cooking it in the crockpot because of the ease and tastiness.

Roast Sticky Chicken-Rotisserie Style

This was fantastic! I didn't have time to let it sit overnight but did let it sit for a couple of hours in the fridge, uncovered. I also didn't have time to cook it slowly, so I cooked it at 450 for 30 minutes, then at 350 for another 30. I also added a little water to the bottom of the pan since I was cooking it so high but broth would have been better. I have to agree that this made the BEST pan gravy. It was a huge hit in my house!

Tater Tot Taco Casserole

This gets 5 stars for ease of preparation, versatility and flavor. I did double the amount of tater tots, which I would definitely do again. Also, I think I'd add some jalapenos, but that's a personal preference. Sour cream is another topping option. This reheated nicely and was very tasty, especially as leftovers. Overall, it was a nice change of pace that will now go in my rotation! I'd also be interested to know if anyone has tried freezing this.

Shepherd's Pie VI

It was delicious! I did add a little HP sauce to the the gravy. Definitely make enough gravy, as it complements everything else well. I didn't have any carrots, so I just tossed a can of peas on top of the beef. Hubby loved it!

Bacon for the Family or a Crowd

This is how I've been making my bacon for years. A couple of tips, though: if you line your pan with enough foil, then cleanup is a breeze! Also, it makes it convenient to reserve the bacon drippings for later use in other recipes. Lastly, I like to turn the slices once so that they cook evenly. I find that 7-10 minutes per side (depending on thickness) works best in a 400-425 oven.

J.P.'s Big Daddy Biscuits

Best biscuits!!! Holy cow, I've been looking for a good biscuit recipe that wasn't too doughy like some restaurants. This is it!!! Took another reviews advice and used the food processor to get the dough together, which made it so simple. Followed the recipe except that I used butter instead of shortening. Marvelous! Can't see making another other biscuits again. Definitely give them a try! ***Update: Made them again this morning. Accidentally poured in 2 C milk instead of 1. Decided to try doubling the recipe and they came out perfectly again!

Slow Cooker Turkey Breast

I made this for a work pot luck and everyone went crazy for it! Did add a cut up onion, couple of stalks of celery and a few carrots to the bottom of the crockpot, and a little water. Everyone commented on how moist the turkey was! Great recipe!

Lobster Colorado

This was awesome! I made it for my husband for his birthday with roasted asparagus, twice baked potato and yeast rolls. He thought it was the best meal ever! I didn't have any Old Bay, so I used a combo of spices I had on hand and it came out great. Definitely try to get the best steak you can, and I would recommend not letting the lobster brown too much as it can dry it out. I sauteed it until done and topped the steak so that it was still moist. Great recipe!

Sloppy Joes II

Excellent recipe! Lean ground beef is best since it doesn't make the bread so soggy (and reduces the fat). The green pepper definitely made it! Only changes I made were I added a little water during cooking since the mixture did run really thick. I also added a few drops of Worcestershire sauce, extra garlic powder and black pepper. I had leftover hotdog buns so I served them open faced with a knife and fork and a side of chips. An instant hit!

Delicious Ham and Potato Soup

Excellent soup! I followed the recipe but my sauce wouldn't thicken too well after about 12 mins. I ended up decided to bake some crescent rolls at the last minute (my boyfriend loves them with soup) so while the oven heated up and those baked, the soup thickened nicely. A great winter food, but was delicious here in sunny 80 degree Florida!

Chicken Piccata II

I have made this for my boyfriend and friends alike. It's always received rave reviews! I try to make extra sauce and serve it and the chicken over angel hair pasta with a side of steamed veggies. A real crowd pleaser! I do, however, take the suggestion of other reviewers and keep the chicken in a warm oven until it's time to serve instead of cooking it with the sauce. Great recipe!

Juicy Pork Chops

These were stellar! I added a little more garlic than called for as I love it. My boyfriend is not a huge fan but ate every bit of the pork chops including the leftovers! Served with rice and steamed veggies. A great healthy and tasty dinner for a couple of dieters. Thanks for sharing!
