Parsley Spinach Chicken Stew

I was so surprised that this simple combination of ingredients could yield something so delicious! I made this for a week's worth of lunches, and enjoyed it everyday. To make it a little easier I used rotisserie chicken, and like others I skipped the step of frying the parsley and spinach. Also, I don't love potatoes in soup so I skipped that. I will DEFINITELY make this again! Fantastic!

Chicken Breasts with Herb Basting Sauce

I disagree with the folks who thought that the chicken turned out dry. Ours not only turned out very moist, but also DELICIOUS. I upped the herbs a little bit, as I want my herbed chicken to be almost green with them. Thanks for a GREAT and SIMPLE recipe.

Wow--delicious! For those who question the authenticity I can only say that I've travelled through Africa, and the place is huge! If you don't get the same BBQ from one Southern town to another in the U.S., why would a West African recipe taste exactly like what you've had?

Cottage Cheese Chicken Enchiladas

Wow! I never thought to use cottage cheese! My friends and I had a "girl's weekend getaway", and women who in their normal lives daintily pick at food looked like they were forming a rugby scrum around these enchiladas! I made one substitution: cotija (Mexican) cheese for the Monterrey Jack. THANK YOU for a great recipe!

Black Bean and Salsa Soup

This is one of those "I'll-never-tell" recipes. People think that you slaved to make it, but in reality it only takes about 5 minutes to prepare, and 10 minutes to fill your home with an amazing smell that makes people think you've been slaving away in the kitchen. Serve with the Mexican cornbread!

Semmelknoedel (Bread Dumplings)

My husband and I spent part of our honeymoon in Bavaria. These are THE dumplings that we ate. Don't be fooled--I thought that the recipe looked a little weird, but it is perfect. Follow the instructions exactly, and you've got Oktoberfest in the making!

Wow, this was delicious! Like other reviewers I did a chicken version (minced thighs with a knife), and also added pine nuts. DELICIOUS! I have made it twice in one week--once for my husband and I, once for company. Thanks!

Slow-Cooked Flank Steak

Wow! This was great and so easy. We added about 4 more ounces green chiles (not canned, but freshly roasted from the farm stand) since we love chiles. This is an awesome recipe for flank steak that actually turns out tender when left in the Crock Pot. Thanks so much!

Peanut Butter Balls V

Wow, these were fantastic! I ended up making two batches in one week because people were cuckoo for them! For health reasons I used sugar-free peanut butter and substituted just 1 tbsp. of butter for the 2 tbsp. of shortening ("health reasons"--who are we kidding?). AWESOME recipe, delicious and so easy, that will go into our permanent collection.

Kalamata Pork Tenderloin with Rosemary

We love this--it is one of our family favorites. Very bold flavors that blend well with a simple pasta dish (i.e. linguini tossed with olive oil and herb mix) and salad. We love it, and our guests always do, too!

Pumpkin Chocolate Chip Muffins

Yummy yum yum! On a snowy day in Denver I made these little treats. I did the recipe as written--but used mini chocolate chips. This actually yielded 14 muffins for me, not 12. Delicious!

Cake Balls

Allison, these are awesome! I took a few other suggestions and used red velvet cake with cream cheese icing. I also used melted chocolate chips for the coating since I had them on hand. These were a big hit with company, and really, really easy!

Yummy, yummy, yummy!!!!!!!! This was really awesome! I didn't have any brown sugar, so I used 2 tablespoons of maple syrup instead. What an awesome recipe!
