Parsley Spinach Chicken Stew

I was so surprised that this simple combination of ingredients could yield something so delicious! I made this for a week's worth of lunches, and enjoyed it everyday. To make it a little easier I used rotisserie chicken, and like others I skipped the step of frying the parsley and spinach. Also, I don't love potatoes in soup so I skipped that. I will DEFINITELY make this again! Fantastic!

Red Rice Purloo

I'm so sorry--I really wanted to love this dish. I'm not very familiar with low-country cooking, but like Cajun, and all of the ingredients in this recipe, so thought this would be great. A few things that earned this a low rating: 1) Way too many steps for the end product. I think that veg and meat could be combined and steps saved. 2) I really didn't care for the red wine-okra sauce. The okra soaked up the wine, and really did not taste good. 3) Just not enough spice for so many bland ingredients (rice, eggplant), though tabasco helped at the end. 4) The bacon was just lost in the process, and added too much fat for the end result. I wish that I had something better to say, but I don't think that I'll be making this again.

Mom's Zucchini Bread

I used the suggestion about 1/2 applesauce and 1/2 oil, and it turned out ridiculously moist. I do think that it was a little too sweet for my taste, though. Next time I'll cut the sugar, and may use 1/2 whole wheat flour in order to "health it up" a bit.

Grilled Tomato Salsa

I love salsa, and this one was awesome! The broiled tomatoes added a great touch, and I did not have any difficulty chopping them. Made a double batch of this for a party, and it was the first thing gone. Not a super-spicy salsa, but very savory and good.

Vegan Corn Bread

This was overall pretty good. Sometimes vegan recipe makeovers don't taste anything like the original (that's not always a bad thing), and while you could tell there was something different, you could also right away identify it as corn bread. My tasters gave it the thumbs up. My one comment is that it was really dense. It didn't have the sponginess and softness of cornbread--almost more dumpling-like, with a pretty doughy texture even when cooked through. That aside, it was still very tasty and enjoyed by many.

Vietnamese Aromatic Lamb Chops

Oh. My. Goodness. This was out of this world, and I would agree the best lamb I've ever had. I didn't have lamb chops--only lamb stew meat--so I was worried that it wouldn't work as well. The marinade tenderized it perfectly, and then carmelized it in a beautiful manner. Absolutely delicious! Thank you!

Cake Balls

Allison, these are awesome! I took a few other suggestions and used red velvet cake with cream cheese icing. I also used melted chocolate chips for the coating since I had them on hand. These were a big hit with company, and really, really easy!

Southern Texas-Style Beef Barbacoa

The rub for this was excellent, though I felt that it needed a bit more salt. I don't tend to salt my food at the table, and prefer things less salty, but this could use about another 1/2 tsp. I decided to slice my meat instead of shred, and that made it better for burritos. Next time I'll add more salt, and more cayenne to give it a bit more bite.

Zucchini Brownies

Yummers! I worried that these were going to be dry because the batter seemed that way, but they were moist and good. I didn't have walnuts, so added pepitas. And since I was headed in that direction I tossed in a dash of cayenne and cinnamon to make them Mexican chocolate themed. Awesome! And without the frosting these babies are vegan!

Pumpkin Chocolate Chip Muffins

Yummy yum yum! On a snowy day in Denver I made these little treats. I did the recipe as written--but used mini chocolate chips. This actually yielded 14 muffins for me, not 12. Delicious!

Kalamata Pork Tenderloin with Rosemary

We love this--it is one of our family favorites. Very bold flavors that blend well with a simple pasta dish (i.e. linguini tossed with olive oil and herb mix) and salad. We love it, and our guests always do, too!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Unbelievable! I tried this because I thought it sounded interesting (maybe a little bit weird). I told my husband to try it first since I wasn't sure. But it is THE BEST FLOURLESS CHOCOLATE CAKE I've ever had! It's rich, sweet, intensely chocolate--awesome!!!!!! Everyone should give this a try. The ingredients might seem odd, but the technique is simple, and the results are good enough to sell in a bakery! (Only recipe note: I turned my oven up to 360 instead of 350 since I'm at high altitude.)

Chocolate Crinkles II

Wow, delicious and so easy! I totally skipped the chilling step, and they still turned out perfectly! As another reviewer said, they look just like the picture. I also added a little bit of orange zest, which was tasty and added a nice contrast. Next time I might skip the powdered sugar since the cookies are already so sweet. Maybe give them a roll in cinnamon-sugar, instead. I also really like that I could use a heart-healthy oil instead of butter. Thanks for such a GREAT and EASY recipe!
