Oatmeal Chocolate Coconut Chewy

Great recipe with so many options for different nuts and fruits! I did omit the 1/2 cup of white sugar since I used sweetened coconut - we did not miss it at all. Baked them for exactly 11 minutes and they were golden brown yet still chewy!

Chicken Enchiladas I

Great recipe! I did modify slightly for my family's tastes and based on several reviews. Used salsa instead of tomato sauce/water and used enc. sauce instead of taco. Also added lots of fresh cilantro. Thanks for a great base recipe!

Cinnamon-Peach Cottage Cheese Pancakes

Great option for pancakes! I subbed Mango-Peach-Apricot spread for the peach and left out the sugar. Also added a few tablespoons of flaxseed. Much healthier!

This is the best vegetable soup I have ever tasted! My 10, 8, and 5 year old boys even loved it! Only change was to add white beans and a little cayenne pepper! Great on a cold, wet, fall day!

Sweet, Sticky and Spicy Chicken

WOW! This is a great recipe! I followed a few other reviews and dusted the chicken with flour before cooking. I also only used 1 Tblsp of hot sauce since we have young kids. I added some to my portion to meet my tastes.

Lemon Blueberry Bread

Great recipe especially right out of the oven! I did follow the recommendation of others and put flour on the blueberries and baked it for a few minutes with the glaze. I will make this one again.

Laura's Unbelievable Chicken and Pasta

Very good base recipe! I modified according to my families tastes. I added garlic, onions, and rosemary when the chicken was simmering. Instead of cherry tomatoes I used diced tomatoes since the rest of my family doesn't like large, fresh tomatoes. Thanks for a great start to a great dinner!

Oatmeal Pancakes II

Good Hearty flavor!! I substituted the oil for 6 Tbsp of ground flaxseed. This made it really flavorful and healthier! UPDATE: I also added 1 Tbsp vanilla, used milk insted of buttermilk, and ground the oatmeal. Definitely my favorite pancake!

Aunt Joyce's Chocolate Cake

I made this for my husband birthday and we loved it!! We love moist, rich cakes and this was perfect. I used the Chocolate-Genache Icing recipe from this site and it was just the right touch. Not too sweet. I also made it in two round cake pans and put cherries into some of the icing to make a "filling" between the layers. Yum!!!

Festive Bean Spread

This is much better then the standard 7 Layer Dip. I made a few modifications: used refried black beans instead of regular, added olives and avacados to the top, and put 1/2 cup of cheese in the beans. It was a hit at the Chirstmas party! I will definitely be making this again!

This is a great recipe. I did double the sauce since we really like the caramel in my house. I also added some peanuts and mixed nuts for some "surprises" as you eat.

Good Flavor! I did have to make a few small changes - doubled the cornstarch mixture, doubled the garlic, and added one tsp of crushed ginger. The ginger did add a lot to the flavor.

Grandma B's Bean Soup

Good soup! I followed the recommendations of the other reviewers (broth and bay leaves). Since I cooked it a LONG time, it got very thick so I added about 4 more cups of broth. My husband likes stews so this was great for him.

Broiled Tilapia Parmesan

This recipe is awesome!! I didn't change a thing. My husband said it was some of the best fish he has ever tasted. Since my fillets were slightly frozen, I did have to broil lower for a few extra minutes. It still turned out nice and flakey.

This is a great recipe! I made them for my sister's birthday and they were a hit. They rivel the gourmet snickerdoodles I have tasted. I made only one modification. Instead of using butter and shortening, I used just one cup of butter. We do not like the taste of shortening. Kept the cooking time to 8 minutes.

Fluffy Pancakes with Wheat Germ and Applesauce

These turned out fluffy and very tasty. The kids (4 & 6) thought they were great too! I did add a tsp of vanilla and made sure the egg whites were well whipped. I loved a healthier alternative!
