Crustless Spinach Quiche

I have made this three times and it's easy and delicious! I do it with low fat mozza and sometimes mix in old cheddar, and have substituted asparagus as well as fresh spinach. Yum!

Pear Banana Berry Bake

WOOOOOOOHOOOOOOOO! This was terrific. The taste is unique, and a refreshing change to typical food combinations like apple crisp, more like a strawberry-rhubarb cobbler than anything else. Our family loved it. With respect to the "goopyness", I ended up being able to cook it a little longer and evaporate a little more of the moisture out of it, which produced a "saucier" dish. The factors contributing to this were 1)I used a larger dish so it lost more moisture from the surface and 2) I think my oven cooks a little cooler than it should. MAKE THIS DISH, you'll love it. PS. It works even without the cloves, I added a bit of cinnamon instead.

Healthy Banana Cookies

I WANT to love these, but I just don't. I added raisins, chopped apples (which I highly recommend) and cinnamon and in the second round, salt. Still, something is missing. I am going to keep trying them in hopes I crack the code. The banana/oat base is just too appealing to pass up.

Potato Medley

Well in contrast with the agitation of the previous reviewers, I found this simple recipe useful, and will use it again. As an expat living in China we are short on familiar seasonings and long on fresh vegetables, and this hit the spot. I julienned the carrots and potatoes and added zucchini as well.

Easy Pancakes

Excellent pancakes! Our whole family loved them, topped with just a hint of syrup or whipped cream and strawberries. We also added 2 caps full of high quality vanilla extract per cup of flour.

Chicken and Snow Pea Salad

Mixed reviews at our house: I would recommend using very high-quality yogurt, as it is a predominant flavour. The combination and volume of yogurt and mayonnaise can be a bit much for some people, but the snow peas and chicken go well together.

Cream of Broccoli Soup IV

A bit involved with respect to preparation, but *very* tasty and smooth. The chunks of broccoli give this dish some texture, while the pureed broccoli provides great flavour. This receipe is now in our regular rotation!
