Slow Cooker Macaroni and Cheese I

i make mac and cheese from scratch alot, but i've never made it this way, and i won't do it every again! i followed the directions to the letter, but the egg rose to the top and baked up like a custard. the cheese wasn't at all what i'd call creamy, rather it stayed in lumpy shreds, and the outsides was definitely getting crustier when i liked. it was also very very bland. a little paprika or mustard would be nice! but the basic cheese sauce just didn't work well at all.

Frijoles a la Charra

Great recipe, although a little on the spicy side for some. If you're a wimp about spicey stuff, I suggest going easy on the jalapeno's the first time. Also, the southern bred husband told me you shouldn't salt beans until the end of cooking, and he suggested not adding the salt until the last half hour when you add the cilantro and beer.

Chicken Florentine Casserole

this dish has great potential in that the flavors were wonderful, but i think the recipe needs adjustment. first of all it came out watery, so i would start by either draining the spinach or starting with fresh spinach maybe. by putting two cups of cheese on top, the cheese doesn't mix in so the sauce stayed a bit thin, and the cheese just browned on top. i think if you mixed the two cups of cheese into the sauce, it would make for a better sauce as well. will definitely try again, but making the adjustments for a better and less watery sauce.

Irish Chicken and Dumplings

Really easy and very delicious. I did use cream of celery in place of cream of chicken soup, as that's what I had. I also used canned biscuits in place of the dumplings.

New Year's Day Black-Eyed Peas

a very nice simple recipe for black eyed peas. i have to agree that the water amount is a bit off, but i had started this quite early so i just let it boil down. i think the northerners have to remember, black eyed peas is a simple recipes. sometimes you just throw a ham hock in or a bell pepper, but it's not a dish with huge tastes.

Bacon Mushroom Chicken

very yummy! creamy and garlicky. i took the liberty of sprinkling some dried onion flakes on top as well. and was in a small bit of rush for the sauce to thicken so i cheated with corn starch, but it was definitely a hit!

Slow Cooker Lentils and Sausage

Great family dinner, with potential. Whole family loved the flavor, although I did add a couple of cloves of garlic. Lentils definitely needed to be cooked longer and hotter than the recipe calls for. Would recommend at least 10 hours on low, or 6 - 7 on high.

Pork Tenderloin alla Napoli

This was soooooooo delicious. I tried it out as a family dinner, and even my 12 year old loved it, but certainly an awesome idea for a company dinner. Does well served over a bed of risotto. I used canned roma tomatoes, green olives with pimentos, and threw them in with the rosemary and garlic in the minichop to shorten chopping time. I also added the cream at the end to taste, and think I almost doubled it and cooked it a tad longer, but definitely do it by taste! I'd give this one a dozen stars if I could!
