Asparagus Cashew Rice Pilaf

Well as usual I go through the wonderful recipes on this site and email them to my teen to see if it sounds good (this is working well so far!)She didn't think she'd like the Jasmine rice and suggested we try it with just noodles. Ok easy enough but now its actually a whole different recipe! I did everything according to the recipe but with just noodles. My daughter and husband absolutely loved it and their only complaint was that there wasn't enough. This was because I eliminated the rice and wasn't sure how much noodle to use so I only used 1/2 a box of linquine snapped in thirds. Next time I'll use a whole box. So the cashews really didn't seem appropriate so no cashews, but fresh grated parmesan on top! So delicious! Also its much easier to brown the onion and garlic in butter before adding noodles. This is an easy recipe. I love this website!

Black Bottom Cupcakes II

These went together very easily even though there were a lot of ingredients. I reduced the recipe to 12 but only got 9. They tasted much better than I anticipated because I thought the amount of cocoa powder wouldn't be enough but they are very chocolaty and gooey! Next time I will eliminate the egg from the cream cheese mix as was suggested by many I thought it was too runny. Standard size chocolate chips were used. All in all very happy with these! The only thing I would change is the name. Black Bottom just doesn't describe them well enough. I call them "Chocolate chocolate chip cheesecake cupcakes"!

Spinach Lasagna II

This was very easy and went together quickly. Like others I used my favorite jar pasta sauce and I eliminated the eggs for my vegetarian daughter. You can do the cheese filling without eggs but I prefer it with. I also opted for fresh spinach which works out just great and layered it instead of mixing into cheese mix. I used no bake lasagna noodles and extra sauce. All in all a good recipe.

Sesame Noodles

This was so delicious! Another winner from this wonderful website! A I was trying to keep costs down and had to purchase the rice vinegar, I substituted vegetable oil for the sesame oil and it still tasted wonderful! I was hesitant to use the full 6 TBSP soy so I stopped at 4 which turned out to be just right. The accompanying photo shows broccoli which wasn't in the recipe but I had planned on using. I think it's a must!I omitted the hot sauce and decreased the garlic due to family preferences. By the way toasting sesame seeds should've been part of the recipe but is easy and only takes a few minutes (3-5)dry pan, medium heat, shake occasionally. This one is super easy to make, goes together quickly and is the best Asian dish I have ever made! Definitely goes on the "have again" list!

Zucchini Alfredo

As per some of the other reviews I took the suggestion to add onion and use both butter and oil as well as add some parmesan to the sauce. I also agree that it takes more milk to make the sauce the right consistency so I just did that by eye. This is absolutely delicious and not as high in fat and calories as it appears if you use light cream cheese and low fat milk. This ones a keeper. I think that serving it over linguini or other pasta would be almost better texture wise than egg noodles but that is my only criticism. AND it was super easy to make!

Winter Vegetable Hash

My daughter and I are always looking for new vegetarian recipes and this one looked intruiging. It definitely takes some time to chop everything, so I do prep earlier than dinner.I used fresh garlic pressed instead of powder and regular sliced mushrooms due to cost. I had never cooked kale before but liked it and will double the amount next time and it doesn't hurt to put it in near the beginning if you like it tender.Peppers were omitted. Some people asked about how much sage? I used 4 good sized leaves snipped small and thought that was a good amount.I really felt the cooking time was understated, 45min was to my liking. The finished dish was warm and satisfying on a cold night and my daughter and I put it on our "have again" list!
